Creamy Potato Casserole

Combine all ingredients. Place in ungreased 2 quart baking dish
- 1 pkg (30 oz) frozen shredded hash browns, thawed
- 2 cups sour cream
- 2 cups shredded sharp cheddar cheese
- 1 can condensed cream of chicken soup
- 1/2 cup chopped green onion
- 1/4 cup butter, melted
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
Grilled Broccoli

Directions Place broccoli in a large bowl
- 6 cups fresh broccoli spears
- 2 tablespoons plus 1-1/2 teaspoons lemon juice
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3/4 cup grated Parmesan cheese
- Shaved Parmesan cheese
Dumpling Sauce

Mix in small saucepan. Bring to a boil and then simmer for two minutes
- 1/4 cup soy Sauce
- 1/8 cup honey
- 1 tablespoon rice vinegar
- 2 teaspoon sesame oil
- 1/2 teaspoon crushed red pepper flakes
Overnight Slow Cooker Apple Cinnamon Steel-Cut Oatmeal

Peel and core the apples; cut them into 1/2 inch pieces
- 2 apples, peeled, cored, cut into 1/2-inch pieces (2-1/2 to 3 cups chopped)
- 1-1/2 cups fat-free milk (or substitute non-diary alternative like almond milk)
- 1-1/2 cups water
- 1 cup uncooked steel-cut oats
- 2 tablespoons brown sugar (or substitute maple syrup or other desired sweetener)
- 1-1/2 tablespoons butter, cut into 5-6 pieces (optional)
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 tablespoon ground flax seed (optional)
- 1/4 teaspoon salt

- 2 cups rolled oats
- 2 cups buttermilk
- 1 egg
- 2 tablespoons butter or margarine -- melted and cooled
- 1/2 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon

- 2 small red onions, sliced into ½"-thick wedges
- 1 fennel bulb, sliced into ½"-thick wedges
