Cosmopolitan Martini

Pour all ingredients in mixing glass half filled with ice

- 1/2 ounce Cointreau
- 1 ounce vodka
- 1/2 lime -- juiced
- 1 splash cranberry juice
Braised Beef and Tortellini

1 Heat oil on high heat in a large nonstick pan
- 3 tablespoons olive oil
- 1 -2 lb boneless beef short rib (or similar tough cut of beef)
- 1 garlic clove, minced
- 1 small can diced tomato
- 6 ounces fresh mushrooms, sliced
- 8 ounces marsala wine
- 1/4 cup flour
- 1 tablespoon italian seasoning
- 1 -2 lb asiago-filled tortellini, boiled
Ten Fresh

Mix together in a shaker filled with ice
- 1 1/2-2 oz fresh lime juice
- 1 oz simple syrup
- 2 oz Tangeray 10 gin
Crisp Biscotti with Dried Cherries

Place the dried cherries in a microwave-safe bowl and add the orange juice
- 1 cup dried cherries
- 3 tablespoons orange juice
- 4 tablespoons unsalted butter -- cut into pieces
- 1 cup sugar
- 2 large egg whites
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup hazelnuts, coarsley chopped -- roasted
Creamy Mascarpone Polenta

In a 3-quart pan over high heat, bring the broth, garlic, and butter to a boil
- 4 cups (64 fl. oz./2 l) chicken broth
- 1 clove minced garlic
- 1 cups (12 1/2 oz./390 g) Italian polenta
- 2 Tbs. (1/2 stick) (2 oz./60 g) unsalted butter, cut into cubes
- 1/4 cup (3/4 oz./20 g) grated Parmigiano-Reggiano cheese
- 1/4 cup (2 oz./60 g) mascarpone cheese
- Kosher salt and freshly ground pepper, to taste
Skillet Chicken Divan

1. Melt butter in 10-inch nonstick skillet over medium-high heat
- 1 tablespoon butter or margarine
- 3 boneless skinless chicken breasts (about 1 lb)
- Water (or chicken broth) called for on brown rice package for 1 cup uncooked rice
- 2 tablespoons Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup uncooked brown rice
- 3 cups frozen broccoli florets, thawed
- 1/2 cup shredded Cheddar or American cheese (2 oz) (Optional)
- Notes: You can substitute chicken broth for water for more flavor.

- 1/2 cup water
- 1/2 onion, coarsely chopped
- 1/2 cup fresh cilantro, stems removed
- 2 serrano chiles (Remove seeds or not, depending on the amount of heat you prefer)
- 1 15 oz can diced tomatoes
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 3 cups tortilla chips
