Creamy Carrot and Ginger Soup

In a stockpot,heat the oil and saute the garlic and ginger for 1-2 min or just until glossy
- 1/4 cup peanut oil or extra virgin olive oil
- 1 Tbs minced garlic
- 1 Tbs minced ginger
- 3 lbs sweet carrots,peeled and thinly sliced(loose carrots are better)
- 1 Tbs salt,plus additional for seasoning
- white pepper plus additional for seasoning
- 1 Tbs honey
- 8 cups vegetable stock
- 1 cup heavy cream
- 2 oz. unsalted butter
- chopped scallions or chives

Here's a side dish that everyone in my house loves
- 4-5 zucchini squash, peeled, sliced, and steamed (once cooled put them into a strainer and squeeze out as much liquid as possible)
- 1 large onion, sauteed
- 2 cloves of garlic, sauteed

- 2 TBSP potato starch
- 1 tsp salt
