Sauteed Brussels Sprouts

Boil a pot of salted water and add the brussel sprouts
- 2 lbs frozen brussel sprouts
- 1 Tbs unsalted margarine
- 1 Tbs sugar
- 1 tsp salt
- zest of one lemon
- 1/2 cup toasted slivered almonds
Cream of Mushroom Soup(non dairy)

Spray a 6 quart pan with some spray and saute onions until golden
- 2 large onions,diced
- 4 8 oz cans mushrooms with liquid
- 2 large carrots,cut into chunks
- 1 Tbs onion soup mix(no MSG)
- pepper to taste

- 2 large eggplants,peeled and sliced lengthwise 1/2" thick
- 2-3 Tbs water
- 2 medium red bell peppers,seeded and coarsely chopped
- 1 medium onion,coarsely chopped

- 1/2 cup chopped celery
- 4 cloves garlic,chopped
- 8 oz baby spinach
- 1 Tbs Dr. Fuhrman's Vegizest or other no salt seasoning blend,adjusted to taste
- 2 cups no salt added or low sodium pasta sauce,divided
- 4 oz. nondairy mozzarella-type cheese
Roquefort Pear Salad (Dairy)

In a mixing bowl,combine greens,pears,grapes,craisins and pistachios
- 6 oz mixed greens
- 1 pear,cut into 1/2" cubes or sliced
- 3/4 cup red grapes,halved
- 1/2 cup craisins
- 1/2 cup shelled pistachios
- 3 oz goat cheese,crumbled
- HONEY BALSAMIC DRESSING
- 2 Tbs balsamic vinegar
- 1/4 cup white vinegar
- 1/4 cup honey
- 1/2 tsp lemon juice
- 1/2 tsp coarse salt or kosher salt
- 1/8 tsp black pepper
- 6 Tbs olive oil
Silan-Roasted Sweet Potatoes and Leeks

Preheat oven to 400. Cover 1-2 cookie sheets with alum
- 6 large sweet potatoes,half of them peeled,each cut into 1 1/2" chunks
- 2 large leks,root end and top 4" trimmed,sliced into 1/2" thick rounds

- 1/3 cup silan date honey
California Chicken Salad from Victoria Dweck

In a bowl,combine oil,garlic,basil and lemon juice
- 2 Tbs oil
- 2 garlic cloves,crushed
- 2 tsp fresh chopped basil
- 2 Tbs lemon juice
- 1-2 boneless,skinless breasts
- 1 red pepper
- 1 yellow pepper
- 8 oz mushrooms,quartered
- 1/4 cup red wine
- 1/4 cup soy sauce
- 1 head Romaine Lettuce
- 3 oz. thinly sliced pastrami
- WHITE WINE DRESSING
- 1 cup mayonnaise
- 3/4 cup Emerald Riesling or Chardonnay(add a bit of sugar as this option is less sweet)
- 1 Tbs fresh basil
- 1 1/2 tsp oregano
- 1 tsp crushed garlic
- 1/2 Tbs olive oil
- 1/2 small onion,cut into chunks
- 1 Tbs freshly squeezed lemon juice
