Apple Cranberry and Pineapple Crisp from Bon Apetite

  • 1 cup packed light brown sugar
  • 3/4 cup flour
  • 1 1/2 sticks margarine at room temp,diced
  • 1 cup old fashioned oats
  • 1 cup chopped pecans
  • 1/2 cup sugar for the filling
  • 1/4 cup flour
  • 1/2 tsp cinn
  • 1/4 tsp allspice
  • 3 medium golden delicious apples cut int 1/4" slices
  • 1-1/2 cups cranberries(fresh)
  • 2 cups fresh pineapple cubed
  • vanilla ice cream,optional



Step 1

Topping:whisk sugar and flour together in med. size bowl. Add marg. cut in with back of fork until mix is crumbly. Add oats and pecans,blend until clumps form. Can be made one day ahead. Cover and chill.
Filling: Whisk oats,pecans,sugar,cinn and allspice in large bowl. Add apples,cranberries,and pineapple. Stir until fruit is evenly coated. Let stand until juices form,tossing occasionally at least 30 min. Can be made 3 hrs ahead.
Preheat oven to 375,spread filling in a 11x7" glass baking dish. Sprinkle topping over evenly. Bake until filling is bubbling thickly and topping is brown and crisp about 45 min. Let cool at least 15 min. Serve warm or at room temp with ice cream.
