Silan-Roasted Sweet Potatoes and Leeks

Ingredients

  • 6 large sweet potatoes,half of them peeled,each cut into 1 1/2" chunks
  • 2 large leks,root end and top 4" trimmed,sliced into 1/2" thick rounds
  • 1/3 cup olive oil
  • 1/3 cup silan date honey

Step 1

Preheat oven to 400.
Cover 1-2 cookie sheets with alum. foil,set aside
Mix the sweet potatoes and leeks into a large bowl. Toss with the oil to coat all the vegetables. Pour a single layer onto prepared pans. Roast,uncovered,for 30 min. Remove from oven and drizzle on the silan. Coat the vegetables well. Return,uncovered to the oven and roast for an additional 15-20 min,until the sweet potatoes are fork tender and sticky. Toss once during the roasting time. Immediately transfer to serving bowl. The silan may caramelize and become hard if the potatoes are left too long on the pans before serving. If this happens,return to the hot oven for a few min,until the silan liquefies,then transfer immediately to the serving bowl.
