My Moms Beef Stew

Cut stew meat in smaller bite sized pieces,
- 2 lbs stew meat
- 6 Tbsp flour
- 1 Tbsp salt
- 1/4 Tsp pepper
- 1 Tbsp accent
- 1 Tbsp season salt
- 6 Tbsp Vegetable oil
- 2 Cups Water
- 4 Beef Bullion cubs
- 2 med sized onions chopped
- 5 - 6 pcs celery in bite sized chunks
- 8 - 10 carrots in bite sized chunks
- 6 medium potatoes diced
- 1/2 - 1 box frozen peas
Green Giant Creamy Chicken Enchiladas

Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray
- Makes 8 servings
- 1 tbsp olive oil
- 1/2 cup chopped onion (1 medium)
- 2 tsp finely chopped garlic
- 2 cups reduced-sodium chicken broth (from 32-oz carton)
- 3 tbsp all-purpose flour
- 1/2 tsp ground coriander or cumin
- 1/8 tsp pepper
- 1/2 cup reduced-fat sour cream
- 2 cups shredded cooked chicken breast
- 1 cup Green Giant® Niblets® frozen corn, thawed
- 1 cup shredded reduced-fat Mexican cheese blend (4 oz)
- 1 can (4.5 oz) chopped green chiles
- 1/4 cup chopped fresh cilantro
- 8 corn or flour tortillas (6 or 7 inch)
- 1 medium tomato, chopped (3/4 cup)
- 4 medium green onions, sliced (1/4 cup)
- Salsa, if desired
- Cooking spray
Brookies {Brownies+Cookies}

For the Brownie Batter Grease a 9x13 in
- For the Brownie Batter:
- 1 stick of butter (1/2 cup)
- 1 cup white sugar
- 2 eggs
- 2 teaspoons vanilla
- 1/2 cup + 2 tablespoons of cocoa powder
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 3/4 cup all-purpose flour
- 1/2 cup chocolate chips
- For the Blondie Batter:
- 1 1/2 sticks butter (12 tablespoons)
- 2 cups dark brown sugar
- 1/4 cup white sugar
- 2 eggs
- 2 teaspoons vanilla
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips
BANANA BREAD IN MASON JARS

To make this more healthy AND Low Carb, try using Coconut oil and Almond or Coconut flour
- 2/3 cup shortening
- 2 2/3 cups white sugar
- 4 eggs
- 2 cups mashed bananas
- 2/3 cup water
- 3 1/3 cups all-purpose flour
- 1/2 tsp. baking powder
- 2 tsp. baking soda
- 1 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1 tsp. ground cloves
- 2/3 cup chopped pecans or walnuts
- 12 - 1 pint canning jars

Feta Dip

Combine all ingredients in a medium bowl
- 1 1/2 cups feta cheese crumbles
- 1 1/2 cups sour cream
- 3 green onions, sliced then chopped
- 2 cloves garlic, minced
- 1/4 cup flat-leaf parsley, chopped
- 1 tablespoon fresh oregano, chopped
- Juice from 1/2 of a lemon
- Salt and pepper, to taste
Slow Cooker Cabbage Rolls!

•Cook cabbage in boiling water just until leaves fall off head
- 1 large head cabbage
- 1 can (8 ounces) tomato sauce
- 3/4 cup quick-cooking rice
- 1/2 cup chopped green pepper
- 1/2 cup crushed saltines (about 15 crackers)
- 1 egg, lightly beaten
- 1 ounce onion soup mix
- 1-1/2 pounds lean ground beef (90% lean)
- 1 can (46 ounces) V8 juice
- Salt to taste
- Grated Parmesan cheese, optional
Cranberry Salad

Mix jello in 1 3/4 c boiling water
- 1 bag frozen cranberries chopped fine
- 3/4 C sugar
- 1 T orange peel ground (fresh or dried)
- 1 20oz can crushed pineapple
- 2 large boxes of jello (I use orange and cranberry )
- 1 3/4 C boiling water
Chili Cheese Cornbread Waffles

For the waffles: makes 6 Preheat waffle iron to high
- For the waffles:
- 1/3 cup oil
- 6 eggs
- 1 cup milk (plus a couple more tablespoons if needed)
- 1/4 cup sugar
- 1 1/4 cup cake flour
- 1 1/2 cup cornmeal
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- For the chili:
- A couple pounds of ground beef
- 1/2 About 1/2 of a white onion, chopped
- A few sticks of celery, chopped
- A few garlic cloves, minced
- Chili Powder
- Smoked paprika
- Garlic powder
- Oregano
- A couple cans of chili beans
- A couple cans of chopped tomatoes
- A can of V8 juice or regular tomato juice
- 1/4 cup corn starch or flour
- A few tablespoons brown sugar
Potatoes with a Parmesan Crust (Yucon Gold Mashed Potatoes)

- 2 pounds Yukon Gold potatoes, peeled and cut into 2-inch chunks

- 7 tablespoons unsalted butter, softened
- Freshly ground pepper
