Peach and Blueberry Financiers

A Financier is a small French Almond Cake traditionally baked in the shape of a gold bar, hence the name
- 1 cup white Sugar
- 1/2 cup Almond Flour (finely ground Almonds or Almond meal)
- 1/2 cup All-purpose Flour
- 4 Egg Whites
- 1 stick, Browned butter*
- 2 fresh Peaches, pitted and chopped in small pieces (I didn't bother removing the skin but do so if you prefer that)
- 1 (up to 1 1/2) cup(s) fresh Blueberries
- Plain melted butter works too if you don't wanna go through the trouble of browning the butter.
Spinach and Egg Breakfast Wrap with Avocado & Pepper Jack Cheese

- Nonstick cooking spray
- 1 (5-ounce) box or bag baby spinach, chopped
- 4 eggs
- 4 egg whites
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 ounces shredded pepper jack cheese
- 1 avocado, sliced
- 4 whole-wheat tortillas
- Hot sauce
Potato, Asparagus & Mushroom Hash

Made with asparagus, roasted red pepper and mushrooms, this hash has a fresh and light, springtime taste
- 1 pound new or baby potatoes, scrubbed, halved if large
- 3 tablespoons extra-virgin olive oil, divided
- 1 bunch asparagus (about 1 pound), trimmed and cut in 1/2-inch pieces
- 4 ounces shiitake mushroom caps or other mushrooms, sliced
- 1 shallot, minced
- 1 clove garlic, minced
- 1 small onion, coarsely chopped
- 1/2 cup chopped jarred roasted red peppers, rinsed
- 1 tablespoon minced fresh sage
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- Fresh chives for garnish

Dabeli is a popular snack on the go, with street vendor in Mumbai
- Spice Mix:
- 1 red chili dry
- 1 teaspoon coriander (dhania) seeds
- 2 cloves (laung / lavang)
- 1/2 inch cinnamon (dalchini)
- 1/2 teaspoon cumin (jeera) seeds
- 4 black pepper
- Filling:
- 1 cup potato boiled and mashed (aloo)
- 2 tablespoons oil
- 1/2 teaspoon cumin (jeera) seeds
- 1/2 teaspoon salt
- Spice mix which we prepared that should be about 1 tablespoon
- 1 tablespoon tamarind paste (imli)
- 3 teaspoons sugar
- 1/2 cup water
- Also Need:
- 4 buns
- 2 tablespoons butter for cooking
- To Serve:
- 1/4 cup roasted and crushed peanuts
- 1/4 cup fine save available in Indian grocery stores
- 1/4 cup pomegranate (anar) seeds, if not available red or green grapes cut into small pieces
- 3 tablespoons cilantro chutney (dhania chutney)
Sweet Potato Samosas with Ginger-Cucumber Raita

Crisp on the outside and creamy on the inside, with the cool creamy raita to round it all out
- SAMOSAS:
- 1 tablespoon vegetable oil
- 1/2 white onion, cut into small dice (about 1 cup)
- 2 serrano chiles, seeded and finely chopped
- Kosher salt and freshly ground black pepper
- 2 cups leftover Indian Spiced Sweet Potato , recipe follows
- 1/2 cup frozen peas, thawed
- 1/4 cup desiccated coconut
- Eight 6-inch empanada discs
- RAITA:
- 1/2 English cucumber, coarsely grated
- Kosher salt
- 1 cup plain whole-milk yogurt
- 2 teaspoons peeled and grated fresh ginger (about 1-inch), some excess liquid squeezed out
- Pinch cayenne pepper
- INDIAN SPICED SWEET POTATOES:
- 2 pounds sweet potatoes or yams
- Kosher salt and freshly ground black pepper
- 3 tablespoons clarified butter or ghee
- 1/2 teaspoon coriander seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon brown or black mustard seeds
- 1/2 teaspoon turmeric

Creamed Kale and Eggs

- 2 tablespoons unsalted butter or ghee
- 1/2 bunch kale, washed, patted dry, and chopped
- 1 large leek, washed, and chopped
- 1/4 cup heavy cream or coconut milk
- 1/4 teaspoon Celtic sea salt
- 4 large eggs
French Bacon, Potato, and Reblochon Casserole (Tartiflette)

Heat oven to 375°. Grease an oval 2 1⁄2-qt
- 3 tbsp. unsalted butter
- 8 oz. slab bacon, cut into 1" strips about 1⁄2" thick
- 1 medium yellow onion, thinly sliced
- 1 ⁄2 cup dry white wine
- 2 1⁄2 lb. waxy potatoes, peeled and thinly sliced
- Kosher salt and freshly ground black pepper, to taste
- 1 lb. reblochon cheese (murrayscheese.com) sliced 1⁄4" thick

Cook onions in a large pot of boiling salted water until tender, 5-8 minutes
- 2 pounds cipolline or pearl onions
- Kosher salt
- 3 tablespoons olive oil
- 8 ounces pancetta (Italian bacon), cut into 1/4-inch pieces

- 5 pounds skin-on bone-in chicken pieces (breasts, thighs, and/or legs; breasts halved crosswise)

- 2 cups low-sodium chicken broth
