Camarones a la Mexicana
- You will also need:
- 1 pound extra large shrimp, peeled and cleaned
- 1/3 teaspoon salt
- 1/3 teaspoon pepper
- 1/3 teaspoon smoked paprika
- 1/3 teaspoon jalapeño powder
- if you can’t find jalapeño powder, substitute with cayenne or chipotle
- Olive oil
- 1 1/2 tablespoons red wine vinegar
- 1/2 cup diced white onion
- 1 to 2 serrano or jalapeños, diced
- 4 cloves garlic, minced
- 2 roma tomatoes, diced
- Juice of 1 lime
- Salt and fresh cracked pepper to taste
- 1/4 cup chopped cilantro
- Tips~ Jalapeño powder and smoked paprika will stay fresh when stored in a cool, dry space away from light.
- Tips~ Make a quick crunchy cabbage slaw: 3 cups shredded cabbage, 1 cup julienned jicama, 4 diced radishes, 1 minced chile serrano, 1/4 cup chopped cilantro, fresh lime juice, olive oil, salt and pepper to taste.
- Tips~ Double up on the corn tortillas when preparing soft tacos. This will prevent tortillas from tearing and makes for a heartier taco.
Chicken and Dumplings with Mushrooms

Crisp bacon in a large Dutch oven over medium heat; transfer to a paper towel–lined plate
- Dumplings and assembly:
- 6 oz. slab bacon, cut into 1/4” pieces
- 1/4 cup all-purpose flour
- 4 chicken legs (drumsticks with thighs; about 2 lb.)
- Kosher salt and freshly ground black pepper
- 1 1/2 pound mixed mushrooms
- 1 medium onion, chopped
- 6 cloves garlic crushed
- 1/4 cup dry white wine
- 6 sprigs thyme
- 2 bay leaves
- 8 cups low-sodium chicken broth
- 3/4 teaspoon kosher salt, plus more
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon freshly grated nutmeg
- 1/8 teaspoon freshly ground black pepper
- 2 large eggs
- 1/4 cup whole milk

- 1 cup dried cherries (or substitute dried cranberries, or raisins)
- 1 recipe Pizza Dough, refrigerated for at least 8 hours
- Unbleached bread flour or semolina flour, for dusting

Ardsallagh Goat Cheese and Thyme Leaf Soufflé

Bake this soufflé until golden and puffy in a shallow oval dish instead of the traditional soufflé bowl
- To serve:
- 5 tablespoons butter, plus extra for greasing
- 1 cup heavy cream
- 1 cup milk
- A few slices of carrot
- 1 small onion, quartered
- 4-5 black peppercorns
- A sprig of thyme, a few flat-leaf parsley stalks, and a little scrap of bay leaf
- 1/2 cup all-purpose flour
- 5 large organic eggs, separated
- 4 oz goat cheese (we use Ardsallagh), crumbled
- 3/4 cup Gruyere cheese, finely grated
- 1/2 cup mature Coolea or Parmesan cheese, finely grated
- Generous pinch of salt, cayenne, freshly ground black pepper, and nutmeg
- 2 teaspoons fresh thyme leaves
- Lots of thyme flowers, if available
- Green salad
