Dulce de Leche Caramel Apple Cake

1. Preheat oven to 375ºF
- For Crumb Mixture:
- 1 cup room temperature butter
- 1/2 cup sugar
- 1 teaspoon baking soda
- 1 tablespoon lemon or lime juice
- 2 eggs
- 2 teaspoons Mexican vanilla extract or regular
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 2 cups coarsely chopped apples, Granny Smith (I used Braeburns)
- 1 1/2 cups dulce de leche caramel, softened slightly in microwave before adding to recipe.
- 1/2 teaspoon ground anise
- 2 teaspoons cinnamon (freshly ground if possible)
- 8 tablespoons flour
- 8 tablespoons brown sugar
- 8 tablespoons cold butter
Mushrooms Oriental

1 Combine oil, vinegar, soy sauce, garlic and mushrooms in a sauce pan
- 1/4 cup extra virgin olive oil
- 1/4 cup white vinegar
- 2 tablespoons soy sauce
- 2 tablespoons chopped garlic
- 5 cups mushrooms, about 1 pound
- 2 tablespoons thinly sliced green onions (or more)
Sausage, Potato, and Fennel Chowder

- 1 Tbs. olive oil
- 3/4 lb. sweet Italian sausage (about 4 links), casings removed
- 1 large russet potato, peeled and cut into large dice (about 2 cups)
- 1 medium red onion, cut into large dice
- 1 small fennel bulb, trimmed, cored, and cut into large dice (about 2 cups), plus 1 to 2 Tbs. chopped fennel fronds for garnish
- 3 Tbs. dry sherry
- 4 cups lower-salt chicken broth
- 1/4 cup chopped fresh flat-leaf
- 1/4 cup chopped oil-packed sun-dried tomatoes, drained
- 2 Tbs. heavy cream
- 1 tsp. finely grated lemon zest
- Kosher salt and freshly ground black pepper
Mexican-Style Shrimp Ceviche

1. Boil shrimp and garlic in water, salted to taste
- 1 pound small raw shrimp, deveined and unpeeled (41–50 per pound)
- 2 quarts water
- 2 garlic cloves, peeled, slightly crushed
- 3/4 cup lime juice
- 1/4 cup lemon juice
- 4 ounces white onion, diced
- 3 Roma tomatoes, peeled, seeded and diced
- 2 small radishes, cut into matchsticks
- 1/4 cup cilantro, chopped
- 2 serrano peppers, seeded, deveined and diced
- 1/2 cup ketchup
- 1 Hass avocado, diced
- 1 tablespoon olive oil
- Lemon slices for garnishing

- 1/2 cup cream, preferably grassfed
- 1 1/2 cups honey

Beef, Black Bean & Rice Albóndiga Soup

1. Start by combining all of the ingredients for the albóndigas, in the order listed
- For the Albóndigas:
- 1 pound 80/20 ground beef
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon pepper
- 1 tablespoon dried onions or shallots
- 1/2 cup Jasmine rice
- 1/2 cup black beans, drained and rinsed
- 1 egg
- For the Soup Base:
- 2 tablespoons olive oil
- 1 medium white onion, diced
- 1 serrano pepper, minced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 Roma tomatoes, diced
- 1/3 cup cilantro, chopped
- 2 bay leaves
- 6 cups low-sodium beef broth
- 2 cups crushed tomatoes
- 1 tablespoon chile ancho powder
- 1/2 tablespoon tomato bouillon granules (I use Knorr brand)
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon pepper
- Salt to taste
- Juice of 1 lime
- 1 1/2 tablespoons Worcestershire sauce
- 1 cup black beans, drained and rinsed
- For the Garnishes:
- Fried tortilla strips
- Guacamole or avocado slices
- Lime wedges
Homemade Twinkies

In a mixing bowl, sift flour, salt and baking powder
- FILLING:
- 2 large eggs
- 1 / 3/4 cup sugar
- 2/3 cup softened butter
- 1 1/4 cup milk
- 1 1/2 tsp vanilla
- 3 cups white flour. OR 3 cups + 2 Tablespoons cake flour
- 2 1/2 tsp baking powder
- 1 tsp salt
- 1/2 cup butter, room temperature
- 1/2 cup cream cheese, room temperature
- 3 cups powdered sugar
- 1 tsp vanilla
Quick Onion Tarts

Preheat oven to 400 degrees F
- 4 tablespoons olive oil
- 12 small thyme sprigs
- 24 olives, cut in half
- 12 cherry tomatoes
- 1 medium onion (try to find one that will fit in the bottom of the muffin cups, cut into thin circles)
- 1 sheet puff pastry
- 1/2 cup soft feta, goat cheese or ricotta
- 2 tablespoons aged balsamic vinegar (the sweeter, the better)
- Salt and pepper to taste
