- 1/4 cup salted butter
- 4 green onions, chopped
- 1 cup sour cream
- 10oz can cream of chicken soup
- 2 cups sharp cheddar cheese, shredded
- 6 cups frozen shredded potatoes (I usually use a whole 26oz-28oz bag)
- 1/2 cup salted butter, melted
- 3 cups lightly crushed corn flakes

Pennsylvania Dutch Ham and Noodle Casserole

Instructions Heat the oil in a 4-quart saucepan over medium-high heat

- 2 cups cubed cooked ham
- 1 medium onion, chopped
- 1 can Campbell's Condensed Cream of Mushroom soup (Regular or 98% Fat-Free)
- 2 cups shredded extra-sharp Cheddar cheese
- 5 cups extra-wide egg noodles, cooked and drained

- 1 1/2 teaspoons baking powder

- 1 teaspoon cinnamon

- 1 teaspoon vanilla extract
- 2 2/3 cups all-purpose flour
- 1 cup milk
- 3 tablespoons butter; melted

TATOR TOT CASSEROLE

preheat oven 350 spread meat in 9 x 13 casserole cover meat with tator tots mix soups and milk, pour over top bake
- 1 lb gr beef cooked
- 1 1/2 bag tator tots (2 lb bag)
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 12 oz can evaporated milk
Southern Beans and Cornbread

- 1/2 lb. pinto beans
- 1/2 lb. red kidney beans
- 6 cups water
- 2-3 meaty ham hocks, or a slab of fat back
- 4 slices of bacon, fried and chopped
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- Southern Cornbread
- 1/4 cup of bacon drippings
- 1-1/2 cups regular yellow cornmeal (not self rising)
- 3 tablespoons of all purpose flour
- 1 teaspoon of baking soda
- 1 teaspoon of baking powder
- 1 teaspoon of salt
- 2 cups of buttermilk, more or less (see note on how to make your own buttermilk below)
- 1 large egg, lightly beaten
Lil Cheddar Meat Loaves Recipe

In a large bowl, whisk egg and milk
- 1 egg
- 3/4 cup milk
- 1 cup (4 ounces) shredded cheddar cheese
- 1/2 cup quick-cooking oats
- 1/2 cup chopped onion
- 1/2 teaspoon salt
- 1 pound ground beef
- 2/3 cup ketchup
- 1/2 cup packed brown sugar
- 1-1/2 teaspoons prepared mustard
Ham Salad Spread

Mix ham, eggs, celery, pickle relish, and onion together in a bowl
- 3 cups ground fully cooked ham
- 2 hard cooked eggs, chopped
- 2 tablespoons finely chopped celery
- 4 teaspoons sweet pickle relish
- 2 teaspoons finely chopped onion
- 1 cup mayonnaise
- 1 tablespoon prepared yellow mustard
