Breakfast Casserole

Preheat oven to 350°. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain
- 1 pound sliced bacon, diced
- 1 medium sweet onion, chopped
- 6 eggs, lightly beaten
- 4 cups frozen shredded hash brown potatoes, thawed
- 2 cups (8 ounces) shredded cheddar cheese
- 1-1/2 cups (12 ounces) 4% cottage cheese
- 1-1/4 cups shredded Swiss cheese
Potatoes Southern Fried

- 10 medium potatoes, peeled, washed and sliced. (I always fry a lot because we like them leftover. You can cut down on the amount of the potatoes)
- 3/4 to 1 cup oil (I use Canola)
- 1 medium onion, peeled and chopped
- 1 1/2 teaspoons minced garlic
- salt and pepper (I like a lot of pepper and not much salt)
- 2 to 3 tablespoons bacon grease (optional)
Potato Pancake

Directions Coarsely shred the potato and onion
- 1 large baking potato (1 pound), peeled
- 1 small onion (4 ounces), peeled
- 1/4 cup all-purpose flour
- 1 large egg, lightly beaten
- 1 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- Canola or peanut oil, for frying
Vitamix Thick Chocolate Sauce

This is my picture, so you know how thick this gets the way I made it
- Ingredients
- 1 slightly heaped cup of cocoa, (I used 1 and 1/2 cup for thick sauce)
- 1.5 cups sugar
- Pinch of salt
- 1.25 to 1.5 cups water (I used 1 and 1/4 cup water for thicker sauce)
- 1-2 tsp vanilla

Directions: In a Dutch oven over medium-high heat, heat oil until shimmering
- Ingredients:
- 1 tablespoon vegetable oil
- 2 onions, chopped fine
- 1 clove garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons chili powder
- 1 tablespoon dried oregano
- 1 1/2 teaspoons ground cinnamon
- 2 teaspoons unsweetened cocoa powder
- 1 teaspoon salt
- 3/4 teaspoon ground black pepper
- 1/4 teaspoon allspice
- 2 cups low-sodium chicken broth
- 2 cups tomato sauce
- 2 tablespoons cider vinegar
- 2 teaspoons dark brown sugar
- 1 1/2 pounds 85 percent lean ground beef
- 8 all-beef hot dogs
- 8 buns
- Yellow mustard
- 1 cup white onion, chopped fine
- 12 ounces mild cheddar, shredded fine
Pumpkin spice coffee cake

Instructions Preheat oven to 350, spray your bundt pan with non-stick cooking spray
- For the Cake:
- 1 spice cake mix (I used Duncan Hines)
- 6 Tablespoons flour
- 3 eggs
- 1 cup water
- 1 (15 oz) can of pumpkin puree
- 1/2-2/3 cup chopped walnuts
- For the Brown Butter Spice Glaze:
- 4 Tablespoons butter
- 1 1/2 cup powdered sugar (I added a little more to thicken mine up a bit)
- 1 teaspoon vanilla
- 2 Tablespoons milk
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cloves
Spaghetti Pie Casserole Recipe

Cook spaghetti according to package directions; drain
- 1 package (8 ounces) spaghetti
- 1 pound ground beef (Enhance the Flavor With Johnsonville Italian Sausage.)
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 jar (14 ounces) spaghetti sauce
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 3 ounces reduced-fat cream cheese
- 1 cup (8 ounces) reduced-fat sour cream
- 3 green onions, chopped
- 1-1/2 cups (6 ounces each) shredded cheddar-Monterey Jack cheese
Milchreis (German Rice Pudding)

Directions Mix the rice, sugar and salt in a large saucepan
- 1 cup short grain white rice
- 1 ⁄4 cup sugar
- 3 cups milk
- 1 cup cream
- 1 ⁄8 teaspoon salt
- 2 inches piece vanilla beans, split open (or 1 teaspoon vanilla extract)
Zucchini and Tomato Casserole

- 2 medium sized zucchini, thinly sliced
- 1 medium onion, chopped
- 2 or 3 medium sized tomatoes, sliced
- 2 cups cheese, shredded (I used a combination of cheddar and parmesan) Can use any combination or whatever you like and can use as much as you like)
- 1 1/2 cups bread crumbs ( I make my own bread crumbs. You can find the instructions for making them here.)
- 1 teaspoon oregano
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon parsley flakes

Directions Place brisket in a Dutch oven and barely cover with hot water; add onion, garlic, cloves and bay leaves
- 1 3-4 lb. corned brisket of beef
- 2 onions, sliced
- 2 cloves garlic, minced
- 6 cloves, whole
- 2 bay leaves
- 6 potatoes, small to medium, pared
- 6 carrots, small, pared
- 6 onions, small, pared
- 1 cabbage, medium, cut in wedges
