Phyllis' Pumpkin Tifle

Preheat oven to 350 In a large bowl, stir oats, cracker crumbs, pecans, brown sugar and spices for crust
- Crumb crust:
- 1 cup quick oats
- 1 cup graham cracker crumbs
- 1 cup chopped pecans
- 1/2 cup firmly packed brown sugar
- 1 1/2 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1/2 teaspoon nutmeg
- 3/4 cup melted butter
- Filling:
- 1 8-ounce package softened cream cheese
- 1 29-ounce can pumpkin
- 1 14-ounce can sweetened condensed milk
- 2 3.4 ounce packages french vanilla instant pudding mix
- 3 cups cold milk
- 1/2 teaspoon cinnamon
- 1 8-ounce container thawed cool whip
Lemon Cake

- 1 package Betty Crocker Lemon Velvet cake mix
- 4 eggs
- 3/4 cup water
- 3/4 cup oil
- 1 small package lemon jello or instant pudding
- powdered sugar and lemon juice
Skinny Pumpkin Muffins

- 1 1/2 cups whole-wheat flour
- 1 1/2 cups old-fashioned oats
- 3/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon ground nutmeg
- 1 1/2 cups canned pumpkin
- 3 tablespoons canola oil
- 1/4 cup low-fat milk
- 1 large egg
- 1 large egg white
- 1/2 cup milk chocolate chips (you can use dark chocolate)

Lemon Coconut Oeey Gooey Bars

The balance of flavors from the tart lemon and sweet coconut is amazing in these delicious bars!
- CRUST:
- 1 (1-pound) yellow cake mix
- 1 egg
- 1 stick unsalted butter, melted
- FILLING:
- 8 ounces cream cheese, softened
- 2 eggs, room temperature
- 1 teaspoon vanilla
- 1/4 teaspoon coconut extract
- 1/2 cup fresh lemon juice
- 2 cups powdered sugar
- 1 stick unsalted butter, melted
- TOPPING:
- 1/2 cup sweetened coconut
- 1/2 cup brown sugar
- 1/2 cup sugar
- 4 tbs melted butter
- 3/4 cup flour
Easy Good Fudge

Put milk and sugar in a pan and bring to a rolling boil, stirring constantly for 12 minutes
- 1 can evaporated milk
- 4 cups sugar
- 3 18 ounce packages of chocolate chips
- 1/2 lb butter cut into chunks
- 7 ounce jar marshmallow whip
- 3 cups walnuts
Easy Cheese Biscuits

- 3 cups packed flour
- 1 teaspoon cream of tartar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon sea salt or regular salt
- 1/2 cup soft butter
- 1/2 cup shredded sharp cheddar cheese
- 1/2 cup shredded asiago cheese
- 2 large beaten eggs
- 1 cup sour cream
- 1/2 cup milk
- 1/2 cup grated parmesan cheese (not the kind in a can!)

- 2 cups shredded coconut
- 2 cups sliced almonds
- 1/2 cup coconut oil (warmed to liquid)

- 3 cups water
- 2 packages top ramen noodles
- 3 teaspoons chicken bouillon
- 3 cups milk

- 1 apple, peeled and chopped
