- 1/2 cup unsalted butter
- 2 cups light brown sugar
- 2 large eggs
- 1 1/2 teaspoon vanilla extract

- 1 teaspoon baking powder

- 10 oz semisweet chocolate, coarsely chopped
- 3 cups shredded coconut
- 12 oz caramels
- 3 tablespoons heavy cream
- 1/2 teaspoon salt

Sour Cream Streusel Coffee Cake

Preheat oven to 350°F. Grease and flour a standard bundt pan
- Cake:
- 1/2 cup butter, softened
- 2 eggs
- 1 tsp vanilla extract
- 1 cup sugar
- 1 cup sour cream
- 2 cups flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- Streusel topping:
- 1/4 cup flour
- 1/4 cup sugar
- 1/4 cup light brown sugar, packed
- 1/2 teaspoon cinnamon
- 2 tablespoons butter, melted
- 1/3 cup pecans, chopped (optional)
- Drizzle (This is optional)
- 2 tbs unsalted butter

Thaw strawberries. Combine orange juice, lemonade and water
- Ice ring:
- 1 10 ounce frozen package strawberry halves
- 1 12 ounce can frozen orange juice
- 1 6 ounce can frozen lemonade
- 6 cups cold water
- 2 1/2 cups gingerale or 4/5 quart champagne
- Arrange halves strawberries, pineapple chunks, orange section and mint leaves in a 2 cup ring mold. Fill with water, orange juice or lemonade. Freeze.
