Dorito Chicken & Cheese Casserole

Preheat oven to 350 degrees
- 3cups3 cups cooked chicken, chopped
- 1cup1 cup sour cream
- 1can1 can cream of chicken soup
- 1can1 can of corn, drained
- 1/4cup1/4 cup minced onion
- 2cups2 cups cheddar cheese, shredded
- 1/2tsp.1/2 tsp. salt
- 1/2tsp.1/2 tsp. pepper
- 1/2tsp.1/2 tsp. garlic powder
- 1medium1 medium sized bag of nacho cheese Doritos, crushed
Pesto-Smothered Grilled Chicken Breast

- 1/4 pound Romano cheese, cut into 1- to 2-inch chunks
- 2 cups loosely packed basil leaves
- 1/4 cup pine nuts
- 2 garlic cloves, peeled
- 1 lemon
- 1 1/4 teaspoons ground black pepper
- 1/2 cup olive oil
- 4 whole skinless, boneless chicken breasts, halved
- 1/4 cup extra-virgin olive oil
- 1 teaspoon salt
- Whole basil leaves, for garnish
Bread Stuffing

- 3/4 cup minced onion
- 1 1/2 cups chopped celery
- 1 cup butter
- 9 cups soft bread cubes
- 2 teaspoons salt
- 1 1/2 teaspoons crushed sage leaves
- 1 teaspoon thyme leaves
- 1/2 teaspoon pepper
Chicken Salad (3 WW PointsPlus)

Place all ingredients in a large bowl and mix until blended
- 3/4 pound cooked skinless boneless chicken breasts cut into bit-sized pieces
- 1/2 cup finely diced celery
- 1/3 cup unsweetened dill pickles, or sweet gherkins, finely diced
- 1/4 cup reduced calorie mayonnaise
- 2 tablespoons reduced fat sour cream
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon Dijon mustard
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Fruit Salad - Birthday Salad

Drain fruit. Mix coconut, marshmallow and sour cream and let set combine all ingredients
- 1 can pineapple
- 1 can mandarian oranges
- 1 can or jar of Royal Queen Anne cherries
- 1 cup coconut
- 1 cup small marshmallow
- 1 cup sour cream
Poppy Seed Chicken Casserole

Mix sour cream, soup and poppy seeds together
- 3-4 cups cooked, cut-up chicken
- 2 cans cream of chicken soup
- 1 1/2 cup (or more) crushed Ritz crackers
- 2 tbsp poppy seed
- 1 stick butter – melted
- 1 1/2 cup sour cream
Chicken and Stuffing

Cut chicken into strips. In baking dish, add broth and then chicken
- 4 boneless, skinless chicken breasts
- 1 cup chicken broth
- salt and pepper
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1/4 cup milk
- 2 cups package stuffing (not Stove Top), preferably Pepperidge Farmes
- 1/2 cup melted butter
Italian Meatballs

Found this recipe in a mystery book I was reading and made it and the Red Spaghetti Sauce December 6, 2009
- 1 pound ground beef or 3/4 pound ground turkey
- 1/2 pound Italian sausage or if you use ground turkey, use 3/4 pound
- 1/2 cup fresh parsley, chopped
- 2/3 cup Italian-flavored bread crumbs
- 2 eggs
- 1 or 2 cloves fresh garlic
- A little milk to moisten the mixture

- 4 tablespoons flour
- 2 tablespooons butter
- 4 tablespoons sugar
