Pineapple Coconut Bites (3 WW PointsPlus)

1.To prepare filling: Spoon pineapple into a small saucepan with honey and cornstarch
- 1 1/4 cups canned crushed pineapple, slightly drained
- 1 tablespoon honey
- 1 tablespoon cornstarch
- Dough
- 1/2 cup almonds
- 6 tablespoons confectioners' sugar
- 1/2 cup whole-wheat pastry flour
- 1/4 cup all-purpose flour
- 1/4 cup unsalted cold butter
- 3 tablespoons light olive oil
- 2 tablespoons unsweetened shredded coconut
- 1 tablespoon cornstarch
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
Homemade Granola

Mix oats, pecans, almonds and chia seeds
- 3/4 cup large flake (old fashion) rolled oats
- 1/4 cup pecan halves
- 1/4 cup almonds
- 1 tsp chia seeds
- 1 tablespoon liquid coconut oil
- 1 1/2 teaspoon honey
Olive Garden Zuppa Toscana

Saute sausage and red pepper in a large pot
- 1 lb Italian sausage
- 1 1/2 teaspoon crushed red peppers
- 1 large diced white onion
- 2 teaspoon garlic puree
- 10 cups water
- 5 cubes of chicken bouillon
- 1 cup heavy crean
- 1 lb sliced russet potatoes, or about 3 large
- 1/4 of a bunch of kale
- 4 tablespoons bacon bits (I leave this out)
Good Fudge

Mix sugar and cocoa. Add Karo and milk
- 2 cups sugar
- 2 rounded tablespoons cocoa
- 2 tablespoons Karo syrup
- 1 cup canned milk
- butter, about the size of a walnut

- 1 cup flour
- 1 cup whole wheat flour
- 1/2 cup sugar
- 1 1/2 teaspoons cinnamon, divided
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 teaspoon nutmeg
- 2 egg whites
- 1 egg
- 1 1/4 cup unsweetened applesauce
- 1/4 cup canola oil
- 3 tablespoons fat free milk
- 1/4 cup packed brown sugar

Preheat oven to 425ºF. Line two cookie sheets with parchment paper (or coat with cooking spray)
- 4 oz parmesan cheese, such as Parmigiano-Reggiano, finely shredded (about 1 1/2 cups)
- 2 TBS chives, fresh, minced
- 2 tbs fresh parsley, minced
- 1/2 tsp freshly ground black pepper
Chicken Fajita Roll-Ups

- 1 Tbsp olive oil
- Juice of half a lime
- 1 clove garlic, minced
- 1 tsp. chili powder
- 1/2 tsp. cumin
- 1/2 tsp. dried oregano
- 1/2 tsp. salt
- Pinch of cayenne pepper (optional)
- 2 Tbsp cilantro, chopped (optional)
- Chicken:
- 3 chicken breasts or 6 thin sliced chicken cutlets 1/4-inch thick
- 1/2 red bell pepper, sliced
- 1/2 yellow bell pepper, sliced
- 1/2 green bell pepper, sliced
- 1/2 yellow onion, sliced
