Mexican Fudge

Place cheese in a large bowl
- 1 lb. Monterrey Jack cheese, shredded
- 1 lb. Cheddar cheese, shredded
- 12 oz. evaporated milk
- 1/2 cup flour
- 2 eggs
- Jalapenos or chilies to taste (2 small cans or 4-6 fresh peppers)
Basic Risotto

- 4 c chicken broth
- 3 Tbsp butter
- 3/4 c finely chopped onion
- 1-1/2 c Arborio rice
- 1/2 c dry white wine
- 1/2 c freshly grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
Portobello Burgers

Combine TVP, cheese, egg, 3/4 tsp salt & 1/4 tsp pepper in a mixing bowl; stir to mix well
- 1 cup textured vegetable protein (TVP)
- 4 oz provolone cheese, shredded (1 cup)
- 1 large egg, lightly beaten
- 3 Tbsp extra-virgin olive oil, divided
- 2 garlic cloves, minced
- 3 medium portobello mushrooms, stemmed & chopped
- 1 small onion, finely chopped
- 1 small zucchini, coarsely grated
- 1/4 cup sun-dried tomatoes (packed in oil), drained & chopped
- salt & pepper
Chuy's Copy Cat Jalapeno Ranch Dip

I cut this recipe in half because it makes a TON! Just add all ingredients to a Vitamix, blender, or food processor
- 1 quart mayo
- 1 cup buttermilk
- 1 cup jalapenos, canned & a little of the juice
- 1 cup tomatillo sauce
- 1/2 bunch cilantro, chopped
- 3 packs dry Ranch mix
Spinach & Cheese Squares

Melt butter in 9x13 pan. Beat eggs, flour, milk, salt and baking powder together
- 4 oz. butter
- 3 eggs
- 1 c. flour
- 1 c. milk
- 1 tsp. salt
- 1 tsp. baking powder
- 1 lb. Monterey Jack cheese, grated (I used Jack and Cheddar combo)
- 4 c. chopped, fresh spinach (I think it would be good with broccoli too)

Pour first four ingredients into shaker
- 2 oz tequila/gin
- 1 oz lime juice
- 1 oz simple syrup
- 1 tsp orange liqueur or about 1/4 oz
- Margarita Salt

- 1 box Oreo cookies, crushed in food processor
- 8 oz. cream cheese
- chocolate almond bark
Snowball Cake

Dissolve gelatin in 1 cup +4 Tbsp hot water
- 1 angel food cake, broken into small pieces
- 1 lb. 4 oz. can crushed pineapple
- 2 envelopes unflavored gelatin
- juice from 1 lemon
- 1 c sugar
- 1 c pecans, chopped
- 3 small containers Cool Whip
Old Fashioned Pumpkin Pie

Beat all ingredients in mixer until smooth
- Pie shell
- 1 3/4 c pumpkin
- 1 c sugar
- 1/2 t salt
- 1 t cinnamon
- 1/2 t ginger
- 1/4 t nutmeg
- 1 2/3 c undiluted evaporated milk
- 2 beaten eggs
Lemonade Cake

CAKE Mix all ingredients for 4 minutes
- CAKE
- 1 box lemon cake mix
- 1 box lemon instant pudding
- 4 eggs
- 1/4 c oil
- 1 c water
- GLAZE
- 1 6 oz can frozen lemonade, thawed
- 2 c powdered sugar
