Northwest Cheesecake Supreme
By Scrappin Broad
Crust Combine all ingredients; press onto bottom of 9" spring form pan
- Crust
- 1 c graham cracker crumbs
- 3 Tbsp sugar
- 3 Tbsp margarine, melted
- Cake
- 4 8-oz. pkgs. Cream cheese, softened
- 1 c sugar
- 3 Tbsp flour
- 4 eggs
- 1 c sour cream
- 1 Tbsp vanilla
- 1 21-oz. can pie filling, flavor of your choice
Breakfast Casserole

- FIRST LAYER
- 1 box seasoned croutons
- 1-1/2 c grated cheddar cheese
- 1 c grated Swiss cheese
- 1 c grated pepper cheese
- SECOND LAYER
- bacon
- ham chunks
- cooked sausage
- THIRD LAYER
- 8 eggs, beaten
- 1 pt. half 'n half
- 1-1/2 c milk
- 1-1/2 Tbs mustard
- onion & or garlic powder
- salt & pepper
Chocolate Amaretto Pie

Combine chips, coffee, sugar & butter in saucepan & cook until melted, stirring constantly
- Baked pie shell
- 6 oz pkg chocolate chips
- 1/4 c brewed Amaretto coffee
- 3 T sugar
- 1 T butter
- 1 1/2 - 3 c softened vanilla ice cream
- 3 T Amaretto
- 1/4 c slivered toasted almonds
Pumpkin Spice Cake

- 1 cup packed brown sugar
- 1 1/4 cups white sugar
- 1 (15 ounce) can pumpkin puree

- 3 1/2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg

Zucchini or Yellow Squash Casserole

- 2 carrots, coarsely grated
- 1 large onion, diced
- 1 c sour cream
- 1/4 lb. margarine
- 1 small pkg. Pepperidge Farm stuffing mix
- 1 can cream of celery or cream of chicken soup
- 1 tsp salt
Yia Yia's Sunday Sauce

What makes this sauce so good is the long, slow cooking time, which allows it to develop a complex flavor
- 1/4 cup olive oil
- 1 large Spanish onion, finely diced
- 1 tablespoon kosher salt, or more as needed
- 6 cloves garlic, sliced
- Two 28-ounce cans San Marzano tomatoes, with their juice
- 2 pounds meaty beef bones
- 1 cup dry white wine
- 1 tablespoon fresh oregano leaves
- 1 tablespoon crushed red pepper flakes, optional
- 1/4 teaspoon freshly ground black pepper
- 1 bay leaf
Faux Gumbo

1. In a large nonstick saucepan, melt the margarine
- 4 tsp margarine
- 1 green bell pepper, seeded & chopped
- 1 celery stalk, chopped
- 6 green onions, sliced
- 1 garlic clove, minced
- 1 14-1/2 oz can crushed tomatoes
- 2 c chicken broth
- 1 c okra, sliced (fresh or thawed frozen)
- 1/2 tsp dried thyme leaves, crushed
- 1 bay leaf
- 1/8-1/4 tsp cayenne pepper
- 1/2 c regular long-grain rice
- 1/2 lb shrimp, peeled & deveined
- 1/4 lb boneless chicken breast, cut into 1/2" pieces
- 1 2" piece kielbasa, cut into 8 slices
Jello Cake

Dissolve jello in hot water
- 1 box white cake mix
- 4 eggs
- 3/4 c oil
- 1 pkg jello, any flavor
- 3/4 c hot water
Sangria

Mix all ingredients; just before serving, add club soda
- 1 qt red burgandy wine
- 1/2 c orange juice
- 1/2 c lemonade
- 1/2 c sugar, dissolved in a little warm water
- 1/2 c JB brandy
- 1/4 c vodka
- 7 oz. club soda
