Tortilla Roll-ups

Blend all ingredients well and spread over tortillas
- 3 8 oz pkgs. cream cheese, room temperature
- 1 c sour cream
- 6 green onions, chopped
- 3-5 jalapenos, chopped fine
- 2 Tbs Picante sauce
- 2 Tbs lemon juice
- 1/2 tsp garlic powder
- 1 pkg burrito size flour tortillas
Mexican Lasagna, Rachael Ray

Preheat oven to 425 degrees
- 2 lbs. ground chicken or turkey
- 2 Tbsp chili powder
- 2 tsp ground cumin
- 1/2 onion, chopped
- 1 (14-oz) can diced tomatoes or fire-roasted chopped tomatoes
- 1 c taco sauce (Pace)
- 1 (15-oz) can black beans, drained
- 1 c frozen corn kernels
- salt
- 8 (8 inch) spinach flour tortillas
- 2-1/2 c shredded cheddar or pepper jack cheese
Peanut Butter Pie

Crust Combine all ingredients & press into a 9" pie plate

- 1-1/4 c chocolate cookie crumbs (20 cookies)
- 1/4 c sugar
- 1/4 c butter, melted
- Filling
- 1 pkg (8 oz) cream cheese, softened
- 1 c creamy peanut butter
- 1 c sugar
- 1 Tbsp butter, softened
- 1 tsp vanilla extract
- 1 c heavy cream, whipped
- (I used a store-bought pre-made Oreo cookie crumb crust.
- In some places you can buy prepackaged Oreo cookie crumbs.)

Slow Roasted Honey-Glazed Pork

There’s nothing better than sitting down to a hearty slow cooked honey-glazed pork roast dinner
- 1 cup (240-mL) soy sauce, plus 2 tablespoons, divided
- 1/4 cup (50-g) granulated sugar
- 3 tablespoons garlic, chopped
- 1/4 cup (25-g) scallions, chopped
- 2 pounds (910-g) boneless, skin-on pork shoulder
- 1 bunch asparagus, halved
- 6 yukon potatoes, diced
- 2 tablespoons olive oil
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 cup (220-g) dark brown sugar
- 1/2 cup (170-g) honey

- 6 chicken breasts
- 1 cup sour cream
- 1 can cream of mushroom soup
- 1/4 cup chicken broth

Chinese Chicken Burgers with Rainbow Sesame Slaw

- 2/3 cup julienned jicama
- 2/3 cup julienned bell peppers (red, orange, yellow or any combination)
- 2/3 cup snow peas, strings removed and julienned
- 1 1/2 tablespoons rice wine vinegar
- 1 tablespoon sesame oil
- 1 tablespoon sesame seeds, toasted
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 3/4 cup mayo
- Zest and juice of 1 lime
- 2 tablespoons Sriracha
- 2 pounds ground chicken
- 1/3 cup scallions, sliced on the bias
- 2 tablespoons soy sauce
- 2 tablespoons sugar
- 1 tablespoon sesame oil
- 1 tablespoon minced lemongrass
- 6 cloves garlic, minced
- 1 tablespoon vegetable oil
- 6 tablespoons hoisin sauce
- 6 good-quality hamburger buns with sesame seeds
- Sweet potato fries or sweet potato chips, for serving, optional
Fried Rice

Heat oil in heavy skillet & saute rice over medium heat, about 5 minutes or until golden brown
- 1/4 c oil (I use bacon grease)
- 4 cooked bacon slices, crumbled (I use Hormel real bacon pieces)
- 6 eggs, beaten
- 4 Tbsp soy sauce
- 1/4 tsp pepper
- 6 green onions with tops, sliced
Pepper Jelly

Place peppers through fruit juice in blender & liquefy
- 7 jalapenos (seed about half)
- 2 bell peppers
- 1 c vinegar
- 1/2 c fruit juice (choose grape, cranberry or whatever color you'd like)
- 6-1/2 c sugar
- 1/4 t butter (to prevent foaming)
- 1 envelope Certo
Crab Bombs

We used canned crab with lump meat & it tasted excellent
- 1 pound crabmeat
- 1 egg, beaten
- 1 cup Ritz Crackers, crushed
- 1 teaspoon yellow mustard
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon Old Bay seasoning
- 1 tablespoon Worcestershire Sauce
