Lemon Delight

CRUST Mix well then bake at 350 until brown
- CRUST
- 2 c flour
- 2 sticks margarine, melted
- 1 c pecans
- 1 st TOPPING
- 1 c powdered sugar
- 1 8 oz pkg cream cheese
- 1 c Cool Whip
- 2 nd TOPPING
- 3 small boxes instant lemon pudding
- 3 c milk
Lemon Linguine

1. Cook linguine in boiling salted water according to package instructions, or until al dente; drain well
- 1 lb. linguine
- 1 ⁄2 cup extra virgin olive oil
- 1 large lemon, zest of
- 2 large lemons, juice of
- 1 ⁄2 cup chopped green onion
- 1 ⁄4 cup chopped flat leaf parsley
- salt, to taste
- freshly cracked black pepper, to taste
- parmesan cheese (to taste) or pecorino cheese (to taste)

Preheat oven to 350. CRUST Melt margarine in 9x13" pan

- 1 stick margarine
- 1 1/2 c graham cracker crumbs
- TOPPINGS
- 1 can Eagle Brand milk
- 6 oz chocolate chips
- 1 c coconut
- 1 c chopped pecans
Two Tomato Tapas

- 2 large plum tomatoes, seeded and chopped
- 12 dried tomato halves in oil, drained and chopped
- 1 c (4 oz.) shredded Italian 6-cheese blend
- 1/3 c crumbled Gorgonzola or blue cheese
- 1/4 c minced sweet onion
- 1 Tbsp minced fresh basil
- 1 tsp minced fresh rosemary
- 1/4 tsp garlic pepper
- 24 baguette slices

- 8 oz sour cream
- 9 oz Cool Whip, divided

Chicken Rollatini Stuffed with Zucchini and Mozzarella

- 1 tsp olive oil
- 4 cloves garlic, chopped
- 1 1/2 cups (1 medium) zucchini, shredded
- 1/4 cup + 2 tbsp Romano cheese (or parmesan)
- 3 oz part skim shredded mozzarella
- salt and pepper to taste
- 8 thin chicken cutlets, 3 oz each
- 1/2 cup Italian seasoned breadcrumbs
- 1 lemon, juice of
- 1 tbsp olive oil
- salt and fresh pepper
- olive oil non-stick spray
Spiced Mocha Nut Loaf

1. Preheat oven to 350 degrees
- 4 c flour
- 3 c sugar
- 1 c margarine
- 2 c sour cream
- 4 eggs
- 4 tsp cinnamon
- 2 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt 1-2 c nuts (chopped pecans)
- 6 Tbsp instant coffee 1-2 c chocolate chips
- 2 Tbsp hot water
Hot Cheese Grits

Mix all ingredients together & pour into buttered baking dish
- 1 c grits, cooked as directed (can use Quaker quick grits--not instant)
- 3/4 stick margarine
- 3/4 lb. Velveeta (Mexican or regular)
- 2 eggs, beaten
- 1 small jar pimento
- 3/4 tsp garlic
- 3-4 chopped jalapenos
Nieman Marcus Cookies

Cream butter & sugars. Add eggs & vanilla and mix
- 2 c butter
- 2 c sugar
- 2 c brown sugar
- 4 eggs
- 2 t vanilla
- 4 c flour
- 5 c oatmeal, measure then grind in blender to fine powder
- 2 t baking powder
- 2 t baking soda
- 1 t salt
- 24 oz chocolate chips
- 1 8 oz grated Hershey bar
- 3 c chopped nuts
