Red Wine-Braised Pork Chops

Look for chops with a small eye and a large amount of marbling, as these are the best suited to braising
- Salt and pepper
- 4 4 to 12-ounce) 1 12-ounce) bone-in pork blade chops, 1 inch thick
- 2 2 2 teaspoons vegetable oil
- 2 2 2 onions, halved and sliced thin
- 5 5 1/4 sprigs fresh thyme plus 1/4 teaspoon minced
- 2 2 2 garlic cloves, peeled
- 2 2 2 bay leaves
- 1 1 piece 1 (1/2-inch) piece ginger, peeled and crushed
- 1/8 1/8 1/8 teaspoon ground allspice
- 1/2 1/2 1/2 cup red wine
- 1/4 1/4 1/4 cup ruby port
- 2 2 1/2 tablespoons plus 1/2 teaspoon red wine vinegar
- 1 1 1 cup low-sodium chicken broth
- 2 2 2 tablespoons unsalted butter
- 1 1 1 tablespoon minced fresh parsley
Grilled Chicken Cordon Bleu

Directions Heat the grill to high
- 4 boneless, skinless chicken breasts, pounded thin
- Olive oil
- Salt and freshly ground black pepper
- 1/2 pound triple creme cheese (recommended; Red Hawk) or brie, thinly sliced

Pork Tenderloin in the Slow Cooker

Place pork tenderloin in a slow cooker with the contents of the soup packet
- 1 (2 pound) pork tenderloin
- 1 (1 ounce) envelope dry onion soup mix
- 1 cup water
- 3/4 cup red wine
- 3 tablespoons minced garlic
- 3 tablespoons soy sauce
- freshly ground black pepper to taste
Crunchy Cole Slaw

- Salad
- 1 lb shredded cabbage or cole slaw mix
- 1 bunch green onions thinly sliced
- 1 pkg Chicken Flavor Ramen Noodle Soup
- 3/4 c toasted almond slices
- 1/2 c roasted sunflower seeds
- Dressing
- 2 Tbsp sugar
- 2 Tbsp red wine vinegar
- 1/2 c salad oil
- seasoning packet from Ramen Noodles
Sesame Ginger Chicken

For the chicken marinade: In a mixing bowl, combine the chicken with the sesame oil, sugar, soy sauce and pepper
- 2 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
- 6 tablespoons sesame oil
- 2 1/2 tablespoons sugar
- 2 tablespoons soy sauce
- 1 teaspoon cracked black pepper
- 1 cup plus 2 tablespoons cornstarch
- Vegetable or peanut oil
- 2 tablespoons minced garlic
- 1 tablespoon minced ginger
- 4 tablespoons Chinese Shoaxing rice wine
- 2 tablespoons hoisin sauce
- 2 tablespoons oyster sauce
- 2 tablespoons low-sodium soy sauce
- 1 1/2 tablespoons honey
- 1 tablespoon sambal chili sauce
- 1 tablespoon Thai chili sauce
- 1 lemon, zest and juice
- Toasted sesame seeds, for garnish
- Scallions, thinly sliced on an angle, for garnish
- Rice, for serving

- 1/2 cup butter
- 1 onion, chopped
- 1 (16 ounce) package frozen chopped broccoli
- 4 (14.5 ounce) cans chicken broth
- 1 (1 pound) loaf processed cheese food, cubed
- 2 cups milk
- 1 tablespoon garlic powder
- 2/3 cup cornstarch
- 1 cup water
Calabacita

If starting with raw chicken, cook the chicken in a little oil with the onion & garlic in a stockpot
- Chicken, cooked and chopped (I use rotisserie chicken)
- 2 Calabaza (Mexican Squash or Zucchini Squash), diced
- 1 large onion, diced
- 2 tsp garlic
- 1 Tbsp cumin
- 2 tomatoes (fresh or cans of diced; I like Fire Roasted)
- 1 can whole kernel corn
- 2 cans Chicken Broth (or Better than Bouillon Roasted Chicken Base plus water)
