Four Layer Dessert

Combine crust ingredients and pat into 9x13 pan
- Crust:
- 1 c. flour
- 1/2 c. oleo
- 1/2 -1 c. chopped nuts
- 1/4 c. sugar
- Second layer:
- 1 c. powdered sugar
- 1 c. Cool Whip
- 8 oz. pkg. cream cheese
- Third layer:
- 2 pkg. instant chocolate pudding
- 3 c. milk

- 3/4 c. flour
- 1/2 c. milk
- 1 tsp. baking powder
- 1 egg
- 1/2 c. sugar (white)
- 1 small pkg. dry vanilla pudding mix (not instant)
- 1 tsp. vanilla
- 1 large can (29 oz.) sliced peaches drained - reserve juice
- 1- 8 oz. pkg. cream cheese softened
- 3 tbsp. reserved peach juice
- 1/2 c. sugar
- 1 tsp. peach flavoring
- 1 tbsp. sugar
- 1 tsp. cinnamon
Salsa

Chop all ingredients and simmer for 5-6 hours with lid off
- 1 kettle full of tomatoes (blanched and skins removed)
- 2 green bell peppers
- 2 large onions
- 3 jalapeno peppers (seeds and all)
- 2 T salt
- 3/4 cup vinegar
- 2 cloves garlic and little garlic powder
French Onion Soup

In a large pot, melt butter
- 4 tbsp. butter
- 1 tsp salt
- 4 large thinly sliced yellow onions
- 48 ounces chicken broth
- 14 ounces beef broth
- 1/2 cup red wine
- 1 tbsp. worchestershire sauce
- 1 sprig fresh thyme leaves
- 1 bay leaf
- 1 tbsp balsamic vinegar
- 1/4 cup medium dry sherry
- Salt and freshly ground black pepper
- 4 thick slices french bread
- 8 slices gruyere cheese
- 1/2 cup shredded asiago cheese

Enchiladas

Brown meat and onion; drain off grease
- 1 lb. ground beef
- 1 lg. onion
- 1 tsp. salt
- 1 pkg. enchilada sauce mix
- 1 reg. size can chill (without beans)
- 1 pkg. flour tortillas
- 1 (15 oz.) can tomato sauce
- 1 can water
- 3/4 lb. Cheddar cheese
- 3/4 lb. Monterey Jack cheese

Preheat the oven to 350 degrees F
- For the crust:
- 1/2 pound unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 2 cups flour
- 1/8 teaspoon kosher salt
- For the filling:
- 6 extra-large eggs at room temperature
- 3 cups granulated sugar
- 2 tablespoons grated lemon zest (4 to 6 lemons)
- 1 cup freshly squeezed lemon juice
- 1 cup flour
- Confectioners' sugar, for dusting

- 1/2 c. chocolate milk
- 1/3 c. melted butter
- 3 eggs
- 1 container (16 oz.) sour cream
- 1 pkg. (4 serving size) chocolate fudge instant pudding
- 1 bag (12 oz.) chocolate chips (semi sweet)
- 3/4 c. semi sweet chocolate chips
- 3 tbsp. butter
- 3 tbsp. corn syrup
- 1 1/2 tsp. water

In a large skillet melt butter and saute onion and garlic over medium heat for 3-4 minutes- stirring constantly

- 2 T. lemon juice
- 1/2 tsp steak sauce
- 1/2 tsp Worcestershire sauce
- 1 tsp Tabasco
- 2 lbs shrimp
