Tuna Salad

Place tuna in fine-mesh strainer and press dry with paper towels
- 3 (5 ounce) cans solid white albacore tuna packed in water
- 1/4 cup minced onion
- 2 tablespoons olive oil
- 2 tsp. lemon juice
- Salt and pepper
- 1/2 tsp. sugar
- 1/2 cup plus 2 tablespoons mayonnaise
- 1 celery rib, chopped fine
Broccoli Salad

Combine the broccoli, cauliflower, raisins, almonds, and sunflower seeds
- Dressing:
- 1 pound of raw broccoli
- 1 cup cauliflower
- 1/2 cup raisins
- 1/2 cup slivered almonds
- 1 ./2 cup sunflower seeds
- 5 tablespoons green onion
- 1 cup Miracle Whip
- 1/4 cup sugar
- 1 tablespoon vinegar
- Bacon
Tea Cookies

Heat over to 350. Mix butter, sugar, and egg yolk until fluffy
- 1/2 cup soft butter
- 1 egg yolk, reserve white
- 1 cup flour
- 1/2 cup sugar
- 1/2 teaspoon vanilla

Pumpkin Bread

- 3 cups sugar
- 1 cup oil
- 4 eggs
- 2/3 cup water
- 2 cups pumpkin
- 3 1/2 cups flour
- 2 teaspoon soda
- 1 1/2 teaspoon salt

- 1 teaspoon nutmeg and allspice

Strawberries and Cream Poke Cake

Bake cake as directed in a 9 x 13 pan
- Cake:
- 1 boxed white cake mix
- 3/4 cup boiling water
- 3 ounce box strawberry Jello
- 1/2 cup cold water
- Frosting:
- 8 ounce tub Cook Whip
- 1/2 tub of ready made frosting (I like the whipped white frosting)
- 1 teaspoon almond extract
- Fresh strawberries for topping the cake

In a saucepan, sprinkle unflavored gelatin over 1/2 cup cold water; let stand for one minute
- 1 package (3 ounces) berry blue gelatin
- 2 cups boiling water, divided
- 2 1/2 cups cold water, divided
- 1 cup fresh blueberries
- 1 envelope unflavored gelatin
- 1 cup whipping cream
- 6 tablespoons sugar
- 2 cups sour cream
- 1 teaspoon vanilla
- 1 package (3 ounces) raspberry gelatin
- 1 cup fresh raspberries
Caprese Chicken with Bacon

- 8 bacon strips
- 4 boneless chicken breast halves
- 1 tablespoon olive oil
- 1/2 teaspoon salt

- 6 fresh basil leaves, thinly sliced
