Perfect Pepper Steak

Mix all the ingredients in the crock pot
- 2 1/2 – 3 pounds beef stew meat or a piece of steak
- 3 cups beef broth
- 1 14 oz bag Pepper Stir Fry Mix
- 1/2 cup soy sauce
- 2 garlic cloves, minced
- 2 tablespoon cornstarch
- 1/2 teaspoon salt
- 1 teaspoon pepper
Creamy Chicken Soup

In a dutch oven, warm the oil and cook the onions, mushrooms, garlic, celery and carrots until tender
- 2 Tbs. oil
- 1 whole chicken breast, cut-up bite size
- 1 sm. onion, diced
- 8 oz. fresh mushrooms, sliced
- 2 cloves garlic, minced
- 2 carrots, peeled, thinly sliced
- 2 celery ribs, thinly sliced
- 1 C. small size pasta
- 2 cans chicken broth, plus two cans of water
- 1 tsp. parsley
- 1/2 tsp. oregano
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbs. butter
- 2 Tbs. flour
- pinch of salt
- 1 can fat-free skim milk
Pork Chop Casserole

Preheat oven to 350 degrees F
- 1/4 cup all-purpose flour
- 4 thick pork chops, rinsed and left damp
- 3 tablespoons vegetable oil
- 1 3/4 cups beef broth
- 1 (10-3/4-ounce) can condensed golden mushroom soup
- 1 (6-ounce) package long-grain and wild rice mix
- 1 cup water
Blue Cheese Bacon Slaw

In a medium bowl, stir together Ranch dressing and blue cheese
- 2 cups Ranch dressing
- 1 cup crumbled blue cheese
- 2 (12-ounce) packages broccoli slaw mix
- 1/2 cup chopped red onion
- 6 bacon slices, cooked and crumbled
Lighter Sesame Chicken

Prepare rice according to package directions
- 1/2 cup brown rice
- 1/4 cup honey
- 2 Tablespoons sesame seeds
- 2 Tablespoons soy sauce
- 1 garlic clove, minced
- 1 egg white
- 2 Tablespoons cornstarch
- 2 small chicken breasts (12oz), cut into 2″ pieces
- salt & pepper
- 1 Tablespoon vegetable oil
- 2 green onions, chopped
- 2 cups broccoli florets
Basil Burgers with Sun-Dried Tomato Mayonnaise

In a small bowl, combine tomatoes and water
- 1/4 cup sun-dried tomatoes (not packed in oil)
- 1 cup boiling water
- 1 cup fat-free mayonnaise
- 2 teaspoons Worcestershire sauce
- 1/4 cup fresh basil leaves, coarsely chopped
- 2 teaspoons Italian seasoning
- 2 garlic cloves, minced
- 1/2 teaspoon pepper
- 1/4 teaspoon salt
- 1-1/2 pounds ground beef
- 3/4 cup shredded part-skim mozzarella cheese
- 6 whole wheat hamburger buns, split
- Additional fresh basil leaves, optional
Pepperoni Pizza Casserole

Cook the onions in the olive oil until just translucent
- 1 pound of pasta (I used medium shells)
- 1 large jar of spaghetti sauce
- 2 cups shredded mozzarella cheese
- 2 pounds ground beef
- 1 small onion chopped
- 2 tablespoons olive oil
- Pepperoni slices *See note below
- Large container of Ricotta cheese **See note below
Simple Summer Squash Casserole

This crockpot casserole is perfect as a side dish or light meal
- 2 pounds yellow squash, or zucchini, cut into bite size pieces (around 6-cups)
- 1 onion, diced
- 1 carrot, shredded
- 1 can cream of chicken soup
- 1 1/2 cups sour cream
- 1/2 cup flour
- 8 to 10 ounces bread crumbs (or crushed Rice Chex)
- 1 stick butter
- 1 1/2 teaspoons Italian seasoning
