mocha butter cream

Cream the butter until light and fluffy
- 1 cup (225 grams) unsalted butter, room temperature
- 3 1/2 cups (448 grams) powdered sugar, sifted
- 1/4 teaspoon salt
- 1/4 cup heavy cream
- 1/4 cup of your favorite coffee (cooled to room temperature)
- 1 tablespoon (14.3 grams) instant espresso powder (i used espresso but was a little lose powder would be better)
- 2 tablespoons (28.3 grams) cocoa powder, plus more for garnish
Spicy, Ginger, Garlic Marinade

Combine all but the shrimp in a glass bowl with lid
- notes:
- 1 lb extra large shrimp, peeled and deveined (or meat of choice)
- 1 ⁄4 teaspoon red chili pepper flakes
- 1 tablespoon minced fresh garlic
- 1 tablespoon sliced scallion
- 2 teaspoons minced ginger
- 1 lime, juice
- 1 tablespoon peanut oil
- 1 ⁄2 teaspoon hot sesame oil (if you like it hot) or 1⁄2 teaspoon sesame oil
- 1 ⁄4 teaspoon black pepper
- 1 tablespoon fresh Thai basil or 1 tablespoon fresh cilantro, minced
- 1 tablespoon packed brown sugar
- 1 teaspoon soy sauce
- I did 4 times the recipe
- I used 1 bag broc, snow peas, lg costco aspargus and string beans
- Sub peanut with walnut oil
- Used Thai chili paste instead of sesame oil same ratio 4x
- Only did 1 lime
- Forgot cilantro
Baked Zucchini Sticks

- 3 medium zucchini sliced into 3" x 1/2" sticks
- 1 large egg white
- 1/3 cup seasoned whole wheat bread crumbs
- 2 tbsp grated Pecorino Romano cheese
- cooking spray
- 1/4 tsp garlic powder
- salt
- fresh pepper
Crispy Spring Rolls with Herb Salad

Prepare the noodles according to the package instructions
- 1 package (3 3/4 oz.) cellophane or rice noodles
- 3/4 lb. ground pork
- 1/2 lb. large prawns, peeled, deveined and minced
- 1 Tbs. minced peeled fresh ginger
- 1 carrot, peeled and shredded
- 1 garlic clove, minced
- 1 shallot, minced
- 1/4 cup fish sauce
- 1/2 tsp. salt
- 1 tsp. freshly ground pepper
- 1 package large rice paper spring roll wrappers (about 20 sheets)
- Canola oil for frying
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/2 cup fresh basil leaves
- 1 head butter lettuce, leaves separated
- Peanut sauce, homemade or store-bought, for serving (see related recipe at right)
- Vietnamese dipping sauce (nuoc cham) for serving (see related recipe at right)
Shrimp Scampi

Sautee garlic in oil. (about 6-8 cloves) Once garlic is browned add butter

Spinach and Feta-Stuffed Chicken Breasts

Preheat oven to 400°F. In a medium saucepan heat oil over medium-high heat; add spinach and garlic
- 2 tsp. Imported extra virgin olive oil
- 3 cups lightly packed baby spinach (about 4-oz.)
- 1 garlic clove, minced
- 4 (5-oz.) boneless, skinless chicken breasts
- 1/4 cup reduced-fat crumbled feta, divided 1 tsp.
- lemon pepper 1/2 tsp. (didn’t put)
- dried oregano (didn’t put)
- Chopped fresh parsley (optional)
- Additional crumbled feta (optional)
Asparagus, Goat Cheese & Prosciutto Pizza

Place a cast-iron pizza pan in an oven and preheat to 450°F
- 1 Tbs. extra-virgin olive oil, plus more for drizzling
- 1 red onion, thinly sliced
- Salt and freshly ground pepper, to taste
- Dough for one 12-inch pizza, made in a bread machine (see related recipe at left)
- Cornmeal for dusting
- 1 ⁄4 lb. goat cheese, crumbled
- 6 asparagus spears, ends trimmed, spears cooked until tender and cut into 2-inch pieces

1. In the jar of a blender, combine yolks, anchovy, garlic, lemon juice, mustard, and season with cracked pepper
- 2 large egg yolks
- 4 anchovy filets, chopped
- 1 clove garlic, sliced
- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon Dijon mustard
- Fine sea salt and freshly ground black pepper
- 1/2 cup extra-virgin olive oil
- 2 heads romaine lettuce heart, quartered lengthwise and trimmed
- 1/2 cup freshly grated Parmesan cheese
