Lentil Salad

Directions Whisk the vinegar, olive oil, mustard, salt, pepper, parsley and thyme together in a large mixing bowl
- 1/2 cup red wine vinegar
- 1/4 cup olive oil
- 2 teaspoons Dijon mustard
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup finely chopped fresh parsley leaves
- 1 teaspoon finely chopped fresh thyme leaves
- 1 recipe basic cooked lentils, see recipe below
- 6 to 8 slices thick-sliced bacon, cooked and chopped
- 1 pound brown or green lentils, approximately 2 1/2 cups
- 1 small onion, halved
- 1 large clove garlic, halved
- 1 bay leaf
- 1 teaspoon kosher salt
- 1/4 pound salt pork, optional

Southwestern Beef Chili With Corn

Directions Heat the oil in a large saucepan over medium-high heat
- 1 tablespoon olive oil
- 2 carrots, chopped
- 1 onion, chopped
- 1 poblano or bell pepper, chopped
- 1/2 pound ground beef (if not using put an extra can of beans)
- can diced tomato (recipe calls for 2 tbsp tomato paste can use if no diced tomato)
- 2 15-ounce cans black beans, rinsed
- 1 tablespoon chili powder
- kosher salt and black pepper
- 1/2 cup corn kernels (from 1 ear, or frozen and thawed)
- 1/2 cup grated Cheddar (2 ounces)
- 2 scallions, sliced
- broth (enough to cover food in pan)
- 1 tbsp cajun seasoning

1. Preheat the oven to 450 degrees F (220 degrees C)
- 2 tablespoons minced garlic
- 3 tablespoons olive oil
- 1 large head cauliflower, separated into florets (steam 1st)

- 1 1/2 cups rolled oats (gluten free for GF eaters)
