Balsamic Chicken & Peppers

Cook the chicken Season the chicken generously with salt and pepper
- 4 boneless, skinless chicken breast halves or thighs, about 1 1/2 lb. total
- Salt and freshly ground pepper, to taste
- 4 Tbs. olive oil
- 1 red bell pepper, seeded and sliced
- 1 yellow bell pepper, seeded and sliced
- 1 large yellow onion, thinly sliced
- 3 garlic cloves, minced
- 3 Tbs. balsamic vinegar
- 1/4 cup minced fresh basil
- 1 Tbs. minced fresh thyme
Cream Puffs

Puffs: Heat water, butter and salt to a rolling boil
- Puffs:
- 1 cup water
- 1/2 cup of butter
- 1/4 tsp salt
- 1 cup sifted flour
- 4 large eggs
- Cream:
- 1 package of instant vanilla pudding
- 1 cup of heavy cream
- 1 cup of milk.
Beef Stew

Put all ingredients in crock pot in the above order
- Carrots 2-4 large
- Potatos 2 medium-6 small
- Beef- floured and sautéed 1-2lbs
- Onions 1/4-1/2 of a large onion
- Beef bullion cubes 2-4
- Water 1 3/4- 3 1/2
- French Onion Soup 1/2-1 pack
- Salt & Pepper to taste
- Peas * add at end

- 1 1/2 cups all-purpose flour
- 1 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 sticks (12 tablespoons) butter, softened to room temperature
- 1 cup granulated white sugar
- 2 large eggs
- 1 large egg yolk
- 2 teaspoons pure vanilla extract
- 1/2 cup buttermilk (here is a guide for making your own buttermilk)
The Best Vanilla Frosting (yummy use this one!)

- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 1/2 cups milk (I used 1% with stellar results)
- 2 teaspoons pure vanilla extract
- 24 tablespoons (3 sticks) butter, cut into 24 pieces and softened at room temperature

Pork Scaloppine with Prosciutto and Capers

On a plate, combine the flour and the 3/4 tsp
- 1/2 cup all-purpose flour
- 3/4 tsp. kosher salt, plus more, to taste
- Freshly ground pepper, to taste
- 2 Tbs. olive oil
- 4 pork cutlets from loin or leg, each about 6 by 3 inches and 3⁄4 inch thick
- 3 oz. thinly sliced prosciutto, coarsely chopped
- 2 garlic cloves, minced
- 3 Tbs. capers
- 1 1/2 cups dry white wine or vermouth
- 2 or 3 anchovy fillets, rinsed and patted dry (optional)
- Grated zest of 1 lemon
- 1 Tbs. coarsely chopped fresh flat-leaf parsley, dill or chervil

- 1 package regular Oreo cookies (Not Double Stuff) – about 36 cookies
- 6 Tablespoon butter, melted
- 1- 8 ounce package cream cheese, softened
- 1/4 cup granulated sugar
- 2 Tablespoons cold milk
- 1- 12 ounce tub Cool Whip, divided
- 2 – 3.9 ounce packages Chocolate Instant Pudding.
- 3 1/4 cups cold milk
- 1 1/2 cups mini chocolate chips

Cake: Preheat oven to 350 degrees
- Red Velvet Cake:
- 2 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 Tablespoons cocoa powder (unsweetened)
- 2 oz. red food coloring
- 1/2 cup unsalted butter, at room temperature
- 1 1/2 cups sugar
- 2 eggs, at room temperature
- 1 teaspoon vanilla extract
- 1 cup buttermilk, at room temperature
- 1 teaspoon white vinegar
- 1 teaspoon baking soda
- Chocolate Ganache:
- 1/2 cup half and half
- 1 cups dark chocolate, chopped
- Mascarpone Whipped Frosting:
- 8 ounce mascarpone cheese, at room temperature
- 4 ounces cream cheese, at room temperature
- 1/3 cup sugar
- 2 cups heavy whipping cream
- If you don’t have mascarpone, sub all cream cheese, so a total of 12 ounces.
