Heat a heavy saucepan over moderate heat with the butter and oil
- 1/2 stick butter
- 1 tablespoon olive oil
- 8 cups thinly sliced onions (about 2-1/2 pounds)
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1 tablespoon flour
- 8 cups homemade beef stock, or good quality store bought stock
- 1/4 cup Cognac, or other good brandy
- 1 cup dry white wine
- 8 (1/2-inch) thick slices of French bread, toasted
- 3/4 pound coarsely grated Gruyere

- 1/2 cup water

- the garnishes:
- 12 fresh mint sprigs, each about 8 inches long,
- plus 1/2 cup fresh mint leaves
- 1/2 cup sugar
- 1/2 cup fresh lime juice
- 1 cup light rum
- Sugar and 1 or 2 lime wedges for coating rims
- Ice cubes as needed
- 2 cups club soda

Pasta with Grilled Vegetables and Herbs

Prepare a hot fire in a grill
- 2 zucchini, cut lengthwise into thirds
- 1 red bell pepper, seeded and quartered
- 1 yellow bell pepper, seeded and quartered
- 1 large red onion, cut crosswise into slices 1/2 to 3/4 inch thick
- Olive oil for brushing
- Coarse kosher salt and freshly ground pepper, to taste
- 1/2 lb. penne, preferably multigrain
- 3 Tbs. extra-virgin olive oil
- 1/2 cup minced mixed fresh herbs, such as mint, basil, oregano and marjoram (just use basil)
- 1 small red chili, minced (used red pepper)
- 1/4 cup finely chopped pitted Kalamata olives
- 1/4 cup finely chopped walnuts (didn't put)
- 1/2 cup finely chopped feta cheese or a small chunk of Romano cheese (i used panda no or romano)

- Good quality butter and powdered sugar to serve
