Pesto Sauce

In a food processor, combine basil and garlic
- fresh basil leaves
- cloves garlic, minced
- olive oil
- pine nuts (I don’t usually put in)
- grated Parmesan cheese
- salt and pepper to taste
Chicken Stew in White Wine

In a large bowl, combine the flour, salt and pepper
- 1/3 cup all-purpose flour
- Salt and freshly ground pepper, to taste
- 1 chicken, 3 to 4 lb., cut into 8 serving pieces
- 3 Tbs. extra-virgin olive oil
- 3 bacon slices, chopped (I didn’t add)
- 1 yellow onion, thinly sliced
- 8 oz. white button mushrooms, quartered (I used can)
- 1 lb. red-skinned potatoes, cut into 1/2-inch
- pieces (I used regular potatos)
- 3 garlic cloves, crushed
- 4 fresh flat-leaf parsley sprigs (used a sprinkle or 2 of dry)
- 3 fresh thyme sprigs (used a sprinkle or 2 of dry)
- 1 bay leaf
- 1 1/2 cups chicken stock
- 1 1/2 cups white wine
- 1 celery stalk
Homemade Quinoa Masala Burgers

Instructions Preheat oven to 400 degrees Combine all ingredients and mix in a large bowl Form mixture into 8 pat
- 1/2 cup quinoa dry (cooked to package instructions)
- 1 baked sweet potato with skin removed
- 1 egg slightly beaten or 1 tbsp flax seed mixed with 2 tbsp water
- a few springs of fresh cilantro diced
- 1 small onion diced
- 2 inch piece of ginger minced
- 1 garlic clove minced
- 1/2 tsp sea salt
- 1/2 tsp garam masala
- 1/2 tsp curry powder
- 1/4 tsp mustard seed
- 1/8 tsp cayenne pepper
- melted coconut oil for brushing burgers

Antipasta Style Pasta Salad

If just making antipasta double everything and eliminate pasta
- DRESSING:
- 1 package (16 ounces) bow tie pasta
- 2 cups grape tomatoes & 1 smaill red onion chopped (didn’t put in)
- 1/2 cup pickled banana pepper rings
- 1 can (2-1/4 ounces) sliced ripe olives, drained
- 1- 2 ” thick hard salami, diced
- 1- 2 ” thick hard provolone, diced
- 1/2 cup fresh basil leaves, thinly sliced
- 1 small jar of marinated artichoke quarters
- 1 jar of little mushrooms
- 3/4 cup olive oil
- 3/4 cup red wine vinegar
- 1 garlic clove, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon dried basil
Spicy Black Bean Burgers

Combine mayonnaise and chipotle, set aside
- For the Spicy Chipotle Mayo:
- 3 1/2 tbsp light mayonnaise (Hellman's)
- 1 tbsp canned chipotle in adobo sauce
- For the Black Bean Burgers:
- 16 oz can black beans, rinsed and drained
- 1/2 red bell pepper, cut into 2 inch pieces
- 1/2 cup chopped scallions
- 3 tbsp chopped cilantro
- 3 cloves garlic, peeled
- 1 jumbo egg
- 1 tbsp cumin
- 1/4 to 1/2 tsp kosher salt
- 1 tsp hot sauce
- 1/2 cup quick oats (use gf oats for gluten free)
- 4 whole wheat 100 calorie buns (Martin's)*
- 1 small hass avocado, sliced thin

- 1 pie crust
- 1-1 1/2 cups of cheese (cheddar, mozzarella etc.)
- 6-8 pieces of bacon
- 1 1/2 cups of milk
- 3 eggs
- 1/2 tsp salt and 1/4 tsp pepper and 1/2 tsp parsley
Peach-Glazed Pork Chops with Fresh Peach Salsa

To make the sauce, in a small saucepan over medium heat, combine the jam, bourbon, vinegar and salt
- 3/4 cup peach jam or preserves
- 6 Tbs. bourbon whiskey or peach nectar
- 4 Tbs. white wine vinegar
- 1/4 tsp. salt
- 1/2 to 3/4 tsp. hot-pepper sauce
- 1 cup chopped peaches
- 1 green bell pepper, seeded and coarsely chopped
- 1/2 cup chopped red onion
- 1 to 2 jalapeño chilies, seeded and finely chopped
- 3 Tbs. chopped fresh cilantro or mint
- 1 tsp. grated lime zest
- 2 Tbs. fresh lime juice
- Salt and freshly ground pepper, to taste
- 6 boneless pork chops, each about 6 oz. and 3/4 inch thick
- 3 Tbs. olive oil
