"Chorizo" Tacos (Made with Tofu)

1. Heat oven to 400°F. Stack tortillas on a large square of foil and wrap them loosely
- 8 6-inch corn tortillas
- 2 tablespoons olive oil
- 1 small red onion, chopped
- 1 tablespoon chopped garlic
- Salt and freshly ground black pepper
- 1 1/2 pounds firm tofu
- 1 red bell pepper, seeded and chopped, optional
- 1 tablespoon chili powder
- 2 limes, 1 halved and 1 quartered
- 1/4 cup chopped fresh cilantro, for garnish
- 1/4 cup chopped scallions, for garnish
Yogurt Panna Cotta with Raspberry Compote

1. Make panna cotta: Pour 1 cup milk into a small bowl
- Panna cotta:
- 2 cups whole milk
- 2 teaspoons plain, unflavored gelatin
- 1/4 cup sugar
- 2 tablespoons honey
- 2 cups 2% plain Greek yogurt
- 1 teaspoon vanilla extract
- Compote:
- 2 cups frozen raspberries, thawed
- 1/4 cup orange marmalade
- 2 teaspoons sugar
- 2 teaspoons finely grated lemon zest
- 2 teaspoons lemon juice

- Confectioners' sugar
- 2 packets unflavored gelatin
- 1 1/2 c granulated sugar
- 1/2 c light corn syrup
- Pinch salt

- 6 fresh peaches, sliced
- 1/3 cup peach schnapps
- 2 tablespoons fresh lime juice
- 1 teaspoon vanilla extract
- 1 tablespoon granulated sugar
- 1/4 cup loosely packed fresh mint leaves, torn
- Pinch of kosher salt
- 1 cup heavy cream
- 1 tablespoon powdered sugar
- 6 refrigerated jumbo biscuits (from a 16.3-oz. can)
- 1 large egg, lightly beaten
- 3 teaspoons Demerara sugar
Ultimate Double Chocolate Chip Cooies

Heat oven to 375. Combine brown sugar, shortening, milk and vanilla in a large bowl
- 1 1/4 c firmly packed light brown sugar
- 3/4 stick (3/4 c) Cisco baking sticks butter flavor
- 2 T milk
- 1 T vanilla extract
- 1 large egg
- 1 3/4 all purpose flour
- 1 t salt
- 3/4 t baking soda
- 3/4 c semi-sweet chocolate chips
- 3/4 c semi-sweet mini chocolate chips
Buckwheat Pancakes

To prepare the pancake mix, lightly spoon flours into dry measuring cups; level with a knife
- Pancake mix:
- 1 1/2 cups whole-wheat flour $
- 1 cup buckwheat flour
- 3 tablespoons sugar $
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Remaining ingredients:
- 2 1/2 cups low-fat buttermilk
- 1 tablespoon butter or stick margarine, melted
- 1 teaspoon vanilla extract
- 1 large egg white $
Quinoa Crusted Snapper Veracruz

Heat a pan over medium heat and add the oil, garlic and red chili flakes
- For the sauce:
- 2 T. olive oil
- 4 garlic cloves, thinly sliced
- 1/2 t. red chili flakes
- 2 oz. capers
- 1 red onion, julienned
- 1 jalapeño, seeded and sliced
- 2 ripe beefsteak tomatoes, diced
- 1 bay leaf
- 3/4 c. white wine
- 1 c. briny green olives (Drew likes Cerignolas that he pits himself)
- 1 t. sugar
- For the fish:
- 4 5–6 oz. snapper fillets (skin removed)
- Salt and pepper
- 3/4 c. quinoa flakes (found in the hot cereal aisle)
- 2 –3 T. olive oil
- 1 T. butter
Jerk Shrimp Stir-Fry

- 1 lb peeled shrimp
- 2 T jerk seasoning
- 1 T oil
- 1 sweet potato, thinly sliced

- 3 sliced garlic cloves
- 1 jalapeno, seeded and minced
- 2 scallions, sliced
- 1/4 c orange juice
