Chicken Burgers with Carmelized Onions

1. Melt butter in a large skillet over medium-high heat
- 1 tablespoon unsalted butter
- 1 large Vidalia onion, thinly sliced
- 1 1/4 pounds ground chicken
- 1/2 cup part-skim ricotta cheese
- 1 3/4 teaspoons Worcestershire sauce
- 1 3/4 teaspoons Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon vegetable oil
- 4 hamburger buns
- 4 romaine lettuce leaves
Peanut Butter Muffins

Preheat oven to 375 degrees F (190 degrees C)
- 1 1/4 cups all-purpose flour
- 3/4 cup rolled oats
- 3/4 cup brown sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups milk
- 1/4 cup peanut butter
- 1 egg
Italian Meatballs

Mix all ingredients in a large mixing bowl until well combined
- 1 pound ground pork
- 1 pound ground beef
- 1 small yellow onion, diced
- 1 cup minced parsley
- 4 cloves garlic, minced
- 2 cups bread crumbs
- 2 eggs, gently whisked
- 5 ounces Romano cheese, shredded
- 5 ounces Parmesan cheese, shredded
- 1 teaspoon black pepper
- 1 teaspoon salt
Mexican Pizza

Position the rack in the center of the oven and heat to 400
- Half of 1 whole-wheat dough recipe or 1 lb store-bought dough
- 3/4 c canned refried beans, thinned with 1 T water
- 1 1/2 c shredded Pepper Jack or Monterrey Jack cheese (about 5 oz)
- 1/2 c corn kernels, fresh or frozen and thawed
- 1/2 c salsa
- 1 ripe avocado, peeled and chopped into 1/2-in pieces
- 2 T minced cilantro leaves

- 1/2 c bottled olive oil and vinegar salad dressing or Italian salad dressing
- 1 t finely shredded lime peel
- 3 lb large shrimp, peeled, deveined and cooked
- 1/4 c snipped fresh herbs, such as dill, cilantro, and/or parsley
- 1/4 c crumbled feta cheese
- Lime wedges
- 8-12 oz baguette-style French bread cut into slices

- 1 oz pomegranate juice

- 1 1/2 cups sugar
- 1/2 cup unsalted butter, softened
