Tofu Scramble

Drain tofu and crumble into a large bowl
- 1 pound firm tofu
- 1 teaspoon olive oil
- 1 green bell pepper, chopped
- 1 cup chopped onion
- 1 tablespoon tamari or soy sauce
- 1 teaspoon Italian seasoning
- 1 teaspoon cumin
- Salt and pepper to taste
- 1/3 About 1/3 cup vegetable broth
Pumpkin Pancakes

Whisk dry ingredients (thru cloves) together in a large bowl
- 1 1/2 c flour
- 2 T sugar
- 2 t baking powder
- 1/2 t cinnamon
- 1/2 t ground ginger
- 1/2 t salt
- 1/8 t nutmeg
- pinch ground cloves
- 1 egg
- 6 T pumpkin puree
- 2 T melted butter
- 1 c milk
Classic Bread Pudding

1. Generously coat an 8-inch square baking dish with butter
- 1 (1-pound) day-old baguette or loaf of Italian bread (see the Baker's Tip below)
- 1/2 cup golden raisins
- 4 large eggs
- 1 cup whole milk
- 1/2 cup plus 2 tablespoons sugar
- 1 cup whipping cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Whipped cream for serving (optional)
Petite and Sweet Shepherd's Pie

1. Place the sweet potatoes in a steamer and steam until very tender, about 12 minutes
- 1 1/2 pounds sweet potatoes (about 2 medium), peeled and diced
- 2 large eggs
- 1 medium carrot, peeled and shredded
- 1 medium parsnip, peeled and shredded
- 3 cloves garlic, minced
- 1/2 cup bread crumbs
- 2 tablespoons tomato paste or ketchup
- 2 teaspoons Worcestershire sauce
- 2 teaspoons chopped fresh thyme
- 1 1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1 pound lean ground pork
- 2 tablespoons flour
- 1 tablespoon butter
- 1/4 teaspoon nutmeg

Beet, Plum and Ricotta Salad

STEP 1 Place beets in a steamer basket or colander set in a saucepan filled with 2 inches of simmering water
- 3 medium beets (such as a mix of red, yellow, and Chioggia), trimmed, scrubbed, and quartered
- 3 plums, pitted and cut into wedges
- 1/2 cup fresh ricotta
- 3 teaspoons champagne vinegar
- 3 tablespoons extra-virgin olive oil
- 1/2 teaspoon coarse salt
- Freshly ground pepper
- 1/4 cup fresh basil leaves
Prosciutto Mozzarella Pizza

Step 1 Preheat oven to 475 degrees
- 1/3 recipe Basic Pizza Dough, or 3/4 pound store-bought dough
- 8 ounces fresh mozzarella, grated (about 1 1/2 cups)
- Freshly ground black pepper
- 3 to 6 thin slices prosciutto
- Extra-virgin olive oil
- Coarse salt
Southwestern Breakfast Casserole

You can assemble this entire dish up to a week ahead
- 1 (8 1/2-ounce) package corn muffin mix
- 3 cups (1/2-inch) cubed white bread
- 8 ounces hot turkey Italian sausage
- 1 cup chopped onion
- 2 1/2 cups fat-free milk
- 1 teaspoon ground cumin
- 1/8 teaspoon black pepper
- 1 (10-ounce) can diced tomatoes and green chiles, undrained
- 1 (8-ounce) carton egg substitute
- Cooking spray
- 1 cup (4 ounces) shredded reduced-fat Monterey Jack or mild cheddar cheese, divided
Maple Cake

1. Heat oven to 350 degrees
- Cake
- 3 cups self-rising cake flour (such as Presto)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground nutmeg
- 1/2 cup (1 stick) unsalted butter, softened
- 2/3 cup packed light-brown sugar
- 1/2 cup maple syrup
- 2 eggs
- 2/3 cup sour cream blended with 1/2 cup milk
- 1/2 teaspoon maple flavoring
- Frosting
- 1 cup (2 sticks) unsalted butter, softened
- 1 8 ounce cream cheese, softened
- 1 16 ounce box confectioners' sugar
- 1 - 2 tablespoons milk
- 1/4 teaspoon maple flavoring
- 3/4 cup finely chopped walnuts (optional)

Fresh Corn and Chicken Chowder

1. In Dutch oven combine chicken, corn and broth
- 12 ounces skinless, boneless chicken breast halves or chicken thighs
- 4 fresh ears of sweet corn
- 1 32 ounce container reduced-sodium chicken broth
- 1 small green sweet pepper, chopped (1/2 cup)
- 1 cup milk
- 1 1/4 cups instant mashed potato flakes
- Salt and ground black pepper
- Crushed red pepper (optional)
Thai Cooking Sticky Rice with Mango

Soak rice overnight or for about 4 hrs
- 2 c sweet or gluttonous rice (either long grain or short grain)
- 2 c coconut cream (small can, or can use coconut milk and just take cream off the top. Use milk on bottom to make coconut soup)
- 1 c sugar
- large pinch of salt
- 1 t vanilla
- Mango slices
