- 2 cups water
- 2 stalks celery, thinly sliced (about 1/2 cup)
- 4 scallions, thinly sliced, white and light-green parts separated
- 2 cloves garlic, thinly sliced
- 1 1-inch piece ginger, peeled and julienned
- 1 small serrano or jalapeno chile, stemmed and thinly sliced (about 1 tablespoon)
- 1 pound boneless skinless chicken-breast halves
- 2 heads baby bok choy (about 12 ounces), stalks sliced crosswise into 1/2-inch pieces, leaves left whole
- 3/4 teaspoon fish sauce
- Coarse salt

Almond Cake

The almonds give this cake recipe pleasing texture, and it's not too sweet, making it perfect for brunch
- 1 1/2 cups all-purpose flour
- 3/4 cup sugar
- 1/2 cup chopped sliced almonds, toasted and divided (about 2 ounces)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup fat-free milk
- 1/4 cup butter or stick margarine, melted
- 1/4 cup amaretto (almond-flavored liqueur)
- 2 large eggs, lightly beaten

Mexican Style Eggs

Heat oven to 300º F. Stack the tortillas, wrap them in foil, and put them in the oven for 10 minutes
- 4 6-inch corn tortillas
- 1/2 16-ounce can refried (or black) beans
- 1 10-ounce can red enchilada sauce
- 2 to 4 eggs (1 to 2 per person)
- pinch of salt (or to taste)

Steak with Fennel and Beans

In a large skillet heat the oil over med-high heat
- 1 T olive oil
- 2 10 to 12-oz beef shoulder petite tenders
- 1 small fennel bulb, saving 2 T of the feathery fronds
- 1/2 c reduced sodium beef broth
- 1 med onion, chopped (1/2 c)
- 1 c grape tomatoes, halved
- 2 cloves garlic, minced
- 1 T fennel seed, coarsely crushed
- 1 15-oz can cannellini (white kidney) beans, rinsed and drained
- 2 T balsamic vinegar
Whole-Wheat Pizza Crust

In a large bowl or in the bowl of a stand mixer, stir together the water, yeast and sugar
- 1 1/2 c warm water (105-115 degrees)
- 2 1/2 t (one 1/4-oz pkg) active dry yeast
- 1 t sugar
- 2 1/2 T olive oil
- 1 1/2 c whole wheat flour
- 1/4 c toasted wheat germ
- 1 1/4 to 1 1/2 c bread flour, plus more for dusting

- 1/2 t cumin
- 1/4 c white-wine vinegar
- 1/2 c plain kefir

Sweet Potato Soup

1. In a medium saucepan cook onions and carrots in olive oil over medium heat for 5 minutes
- 1 chopped onion
- 1 chopped carrots
- 1 tablespoon olive oil
- 1 - 2 teaspoons curry powder
- 14 1/2 ounces reduced-sodium chicken broth
- 1/8 teaspoon cayenne pepper
- 1 cup orange juice
- 2 cups mashed, cooked sweet potato
- salt
- croutons (optional)
- plain yogurt (optional)
- green onion, chopped (optional)
