Healthy Cocoa Bites

Put all ingredients in a food processor until nuts are finely chopped
- 2 c whole pitted dates (about 10 oz)
- 1 c unsweetened shredded coconut

Summer Pea, Watermelon and Farro Salad

1. Place farro in a large saucepan, and cover with water to 2 inches above farro
- 1 cup uncooked farro or wheat berries
- 1 cup shelled green peas (about 3/4 pound unshelled)
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 cup cubed seeded watermelon
- 1 cup coarsely chopped fresh flat-leaf parsley

Brisket with Ginger, Orange Peel and Tomato

1. Preheat oven to 325 degrees F
- 1 3 - 5 pound beef or veal brisket
- 2 tablespoons vegetable oil
- 12 cipollini onions, trimmed and halved or 2 medium onions, thickly sliced
- 6 carrots
- 8 cloves garlic, peeled
- 1 tablespoon cider vinegar
- 1 cup dry white wine
- 3 cups veal, beef, or chicken stock
- 3 small tomatoes, halved
- 2 thyme sprigs or 1/2 tsp. dried
- 1 bay leaf
- 5 parsley sprigs
- 1 1/2-inch slice of fresh ginger
- Green tops from 1 leek
- 2 lemons
- 2 oranges
- Coarsely chopped fresh parsley

Stuffed Portobellos

Using a spoon, scrape the gills from the mushroom caps but leave the stems intact
- 6 medium to large portobello mushrooms
- 1 pound Italian sausage, mild or spicy
- 1 medium onion, diced
- 1 cup chopped okra
- 1/2 cup chopped zucchini
- 4 medium cloves garlic, minced
- 1/2 cup Panko breadcrumbs
- 1/4 cup shredded fresh Parmesan
- 1/2 teaspoon garlic salt
- 1/2 teaspoon paprika

Chicken Tagine with Almonds, Apricots, and Olives

Step 1 In a small saucepan, bring apricots and orange juice to a simmer over medium-high heat
- 3/4 cup dried apricots, preferably Turkish
- 2/3 cup fresh orange juice (from 3 to 4 oranges)
- 1 whole chicken (about 3 1/2 pounds), cut into 10 pieces
- Coarse salt and freshly ground pepper
- 1 tablespoon extra-virgin olive oil
- 1 small red onion, halved and thinly sliced
- 2 cloves garlic, halved lengthwise

- 2/3 c sugar
- 2 T vegetable oil
- 1 large egg
- 1 large egg white
- 1 oz unsweetened chocolate, melted and cooled
- 1 T instant espresso powder
- 2 t vanilla extract
- 1 c flour
- 1/4 c cocoa powder
- 1 t baking powder
- 1/4 t salt

- 1 c sprouted flour, white spelt flour or all-purpose flour
- 1/4 t plus dash salt, divided
- 1/2 c cold butter
- 3 large eggs
- 1 c cooked sweet potato, skin removed and pureed
- 1 c cane sugar, divided
- 2/3 c half and half
- 1/2 t grated nutmeg
- 1/2 t allspice
- 1/2 t cinnamon

- 1 1/2 t vanilla extract, divided
