Baked Brie with Pecans

Preheat oven to 350 degrees
- 1 small wheel of Brie or Camembert (about 9 ounces)
- 1/2 cup pecan pieces
- 3 tablespoons light-brown sugar
- 3 tablespoons pure maple syrup

Cucumber, White Bean and Avocado Soup

In a blender, blend everything together until totally creamy and smooth
- 2 cucumbers, peeled and roughly chopped
- 1 avocado, peeled and roughly chopped
- 1 c cooked white beans, rinsed

STEP 1 Prepare cutlets: Preheat oven to 400 degrees
- 4 cups plain panko (Japanese breadcrumbs)
- 1/4 cup extra-virgin olive oil
- 1 teaspoon coarse salt
- Coarse salt and pepper
- 4 large eggs
- 2 pounds chicken cutlets (about 10)
- 1/3 cup all-purpose flour
- 12 fresh basil leaves, plus more for serving (optional)
- 1 1/2 cups homemade or store-bought tomato sauce
- 1 1/4 cups grated mozzarella
- Finely grated Parmesan, for serving
Roasted Butternut Squash Soup

1. Preheat oven to 400°F
- 1/2 large butternut squash (about 1 pound), seeds reserved
- 2 tablespoons maple syrup
- 1 teaspoon freshly squeezed lemon juice

Make Pate Brisee: Pulse together flour, sugar, and salt in a food processor

- Fine sanding sugar or granulated sugar
- FILLING
- 1/3 cup granulated sugar
- 3 tablespoons cornstarch
- Pinch of coarse salt
- 1 1/2 cups whole milk
- 3 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon pure vanilla extract
- 2/3 cup heavy cream
- 8 ounces strawberries, hulled and cut into 1/4-inch slices (2 cups), plus more, quartered, for serving

- FILLING:
- 1 (18.25-ounce) box white cake mix
- 3 large egg whites
- 2 tablespoons vegetable oil
- 1 cup chopped Oreo cookies, about 8 cookies
- 1 cup canned vanilla frosting
- COATING:
- 3 bags (14 ounces each) pink, yellow and white candy melts (such as Wilton)
- 48 lollipop sticks
- 1/2 cup white nonpareils
- 2 crushed Oreo cookies
Almond Butter Cookies with Maldon Salt

Preheat oven to 350 and line sheets with parchment paper
- 1 1/2 c gluten-free flour (if flour doesn't include xanthan gum, add 3/4 t)
- 1/2 t fine sea salt
- 1 t baking powder
- 1 c natural almond butter
- 1 c good quality maple syrup
- 1 t pure vanilla extract
- 1/2 t Maldon sea salt (or you can use any coarse sea salt you have on hand)
Easy white fish

- 6 mild fish fillets
- 3 tomatoes, peeled, chopped and seeded
- 1/2 c green olives, coarsely chopped
- 1/4 c EVOO
- 1 t thyme
- red pepper flakes to taste
- 2 cloves garlic, minced
- 1/2 c finely chopped red onion
- 1 T lime juice
