Hummingbird Muffins

Preheat oven to 350. Combine sugar and honey in a large bowl, microwave at 50% for 45 sec and stir
- Muffins:
- 1 c sugar
- 1/3 c honey
- 2 large eggs
- 1/4 c canola oil
- 1/2 c unsweetened applesauce
- 1/2 c crushed, drained pineapple
- 1 c very ripe banana (about 2 large), mashed
- 1 t vanilla
- 1 1/2 c flour
- 1 t salt
- 1 t baking powder
- 1/2 t baking soda
- 1/2 t cinnamon
- 2 oz vanilla whey protein powder
- 1/2 c chopped pecans
- Crumble:
- 1/2 c steel-cut oats (not quick cooking)
- 1/4 c finely chopped pecans
- 1 T honey
- 1 T butter, melted
- 3 T brown sugar
- Pinch salt
- 1 T flour
Sweet Potato Pudding

Mix all pudding ingredients together
- Pudding:
- 2 29 oz cans sweet potatoes (yams) drained and mashed
- 1/2 c white sugar
- 1/2 can sweetened condensed milk
- 1/4 c butter, softened
- 2 eggs
- 1 t vanilla
- Topping:
- 1 c light brown sugar
- 1/3 c butter, melted
- 1/3 c all purpose flour
- 1 1/2 c walnut pieces
Oat-and-Pecan Caramel Sandwiches

Cookies: Preheat oven to 350 degrees
- COOKIES
- 1 cup (4 ounces) raw pecans
- 2 1/2 cups quick-cooking oats
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon coarse salt
- 2 sticks unsalted butter, room temperature
- 1 1/4 cups packed light-brown sugar
- 2 large eggs, lightly beaten
- 2 tablespoons unsulfured molasses
- 1 teaspoon pure vanilla extract
- FILLING
- 1 1/3 cups granulated sugar
- 1/2 cup heavy cream
- 4 tablespoons unsalted butter, cut into small pieces
Upgraded Banana Bread

Preheat oven to 350. Coat an 8
- Classic recipe:
- 2 c all purpose flour
- 3/4 t baking soda
- 1/2 t salt
- 1 c sugar
- 1/4 c butter, softened
- 2 large eggs
- 1 1/2 c mashed ripe bananas (about 3 bananas)
- 1/3 c plain low-fat yogurt
- 1 t vanilla extract
- Marbled: add 1/2 c melted semisweet chocolate chips
- Berry: add 1 c fresh blueberries
- French toast: add 2 eggs, 2 T milk, ground cinnamon and nutmeg to taste and a pinch of salt
Cat's Party Mix

Preheat oven to 250°. In a small bowl, whisk together 3 Tbsp
- 1 Tbsp. Worcestershire sauce
- 2 tsp. salt
- 1 tsp. chili powder
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 3 Tbsp. honey
- 3 cups cereal, such as Cheerios or shredded wheat
- 1 cup mini pretzels
- 10 cups popped popcorn (from 1/2 cup unpopped kernels; see "Popcorn Basics")
- 1 cup unsalted peanuts
- 1/4 to 1/2 cup wasabi-coated dried peas (optional)
Heart of Palm Dip

On a cutting board using side of a chef's knife, mash garlic with a generous pinch of salt until a paste forms
- 1 large clove garlic, minced
- salt and fresh ground white pepper
- 2 14 oz cans hearts of palm, drained, rinsed and cut into 1-in pieces
- 1/2 c plain Greek yogurt (not nonfat) or sour cream
- 1/4 c EVOO
- pinch cayenne pepper or more to taste
Lamb Curry

STEP 1 Heat oil in a 6-quart pressure cooker over medium-high heat
- 3 tablespoons safflower oil
- 2 onions, finely chopped (about 2 1/4 cups)
- 3 tablespoons grated peeled fresh ginger (from a 3-ounce piece)
- 6 cloves garlic, minced (about 3 tablespoons)
- Coarse salt
- 1 3-inch cinnamon stick
- 2 1/4 teaspoons cumin seeds
- 1 1/2 teaspoons coriander seeds, crushed
- 3/4 teaspoon ground turmeric
- 2 cardamom pods, crushed
- 2 teaspoons tomato paste
- 2 1/2 pounds lamb shoulder, cut into 1-inch pieces
- 12 ounces baby fingerlings (or Yukon Gold potatoes, cut into 1-inch pieces)
- 2 cups low-sodium chicken broth
- 1 bunch spinach, trimmed, washed well, and shaken to remove excess liquid (about 4 cups packed leaves)
- Cilantro, yogurt, Indian pickle or chutney, and flatbread, for serving
Grilled Brioche Desserts

Slice brioche rolls in half lengthwise, then brush each cut side with 1/2 t melted butter
- Blueberry and Vanilla Mascarpone Topping:
- 4 brioche rolls
- 2 t melted butter
- 1/2 c mascarpone
- 1 T sugar
- 1/2 t vanilla extract
- 2 c blueberries
- Chocolate and Cherry Topping:
- 1 oz chopped chocolate
- 1/2 lb pitted, halved cherries
- Coffee Ice Cream and Toffee Crunch:
- 8 T coffee ice cream
- 8 T chopped toffee pieces such as Heath
Impossible Pumpkin Pie

- 1/4 c sugar
- 1/2 c Bisquick baking mix
- 2 T margarine
- 1 13 oz can evaporated milk
- 2 eggs
- 1 16 oz can pumpkin
- 2 1/2 t pumpkin pie spice
- 2 t vanilla
- 2 dashes cinnamon
- 1 dash nutmeg
Stollen Fruit Tart or Almond Tart

Combine dried fruit, orange juice, cognac, and 1/4 teaspoon salt in a saucepan
- 1/2 cup golden raisins
- 1/2 cup dried currants
- 1/2 cup dried apricots, sliced into 1/4-inch strips
- 1/2 cup fresh orange juice
- 1/4 cup cognac
- 3/4 teaspoon coarse salt
- 4 ounces marzipan
- 1 large egg
- Unsalted butter, room temperature, for pans and plastic wrap
