Mom's Meatloaf

Preheat oven to 350. Mix ingredients together and form into a loaf
- 1 lb ground beef
- 1/3 package Saltines (7-10)
- 1 package Lipton onion soup mix
- 1 egg
- 1/3 c milk
Smoked Salmon & Spinach Pinwheels

- 1 8 oz pkg lowfat cream cheese, at room temp
- 1 T chopped fresh chives
- 1 t lemon zest
- fresh ground black pepper
- 3 9-in spinach wraps
- 12 oz thinly sliced smoked salmon
- 3 c baby spinach leaves, stems removed
Apple-Butter Layer Cake

STEP 1 Apple Butter: Preheat oven to 325 degrees
- CAKE
- 1 stick unsalted butter, melted, plus more for pan
- 2 1/4 cups cake flour (not self-rising), sifted
- 2 teaspoons baking powder
- 1 teaspoon coarse salt
- 1 1/2 cups granulated sugar
- 7 large egg yolks, room temperature
- 3/4 cup whole milk, room temperature
- 8 large egg whites
- 1/2 teaspoon cream of tartar
- APPLE BUTTER
- 6 1/2 cups Applesauce
- 1 1/4 cups packed light-brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- ASSEMBLY
- 3 cups Apple Butter
- 1 1/4 cups heavy cream
- 2 tablespoons confectioners' sugar
- Ground cinnamon, for dusting
Pork Medallions with Cider-Sage Sauce

1. Warm a large skillet over medium-high heat; season pork on both sides with salt and pepper
- 1 1 1/4-lb. pork tenderloin, trimmed and cut crosswise into 1-inch-thick medallions
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 3 teaspoons canola oil
- 2 tablespoons minced shallot
- 1 teaspoon minced fresh sage
- 2 teaspoons sherry vinegar
- 1/3 cup apple cider
- 1/2 teaspoon Dijon mustard
- 1 tablespoon cold, unsalted butter, diced
Butter Pecan Bundt Cake

Preheat oven to 325 degrees
- 1 box butter pecan cake mix
- 4 large eggs, lightly beaten
- 1/2 cup vegetable oil
- 1 carton coconut pecan frosting
- 3/4 cup chopped Texas pecans
- 1/4 cup (1/2 stick) butter, softened
- 8 ounces cream cheese, room temperature
- 2 3/4 cups powdered sugar (up to 3 3/4 cups for sweeter frosting)
- 1/2 teaspoon vanilla extract
Barley Risotto with Roasted Butternut Squash and Kale

Preheat oven to 425°F. Line a rimmed baking sheet with aluminum foil and coat with cooking spray
- Olive oil cooking spray
- 1 small butternut squash, peeled, seeded and chopped into 3/4-inch pieces (about 4 1/2 cups)
- 2 tsp olive oil, divided
- 1/2 tsp sea salt, divided
- Fresh ground black pepper, to taste
- 1/2 small onion, finely chopped (about 1/3 cup)
- 3 cloves garlic, chopped
- 1 cup hulled barley, rinsed
- 12 oz kale, stemmed and chopped (4 1/2 to 5 cups)
- 10 sun-dried tomato halves, packed in olive oil, patted dry and chopped
- 1 1/2 tbsp pine nuts
- 1 cup low-fat ricotta cheese
- 2 tbsp chopped fresh herbs (such as mint, basil, rosemary, thyme or sage)
Grilled-Salmon Salad

Mash anchovies with a spoon in a small bowl
- 8 anchovies packed in olive oil, drained
- 1 teaspoon Dijon mustard
- 1 teaspoon finely grated lemon zest, plus 3 tablespoons fresh juice
- 1/2 cup plus 2 teaspoons extra-virgin olive oil, plus more for brushing
- Coarse salt and freshly ground pepper
- 12 ounces very small new potatoes
- 1 1/4 pounds skin-on salmon fillet (about 1 3/4 inches at thickest part)
- 12 ounces sugar snap peas, trimmed
- 6 large eggs
- 3 cups watercress, trimmed
Moo-Shu Pork Roll-Ups

1. Stir together first 5 ingredients in medium bowl
- 2 T soy sauce
- 4 t dry sherry
- 2 t cornstarch
- 1 t sugar
- 1/8 t black pepper
- 8 oz pork tenderloin, cut against the grain in 1/4-in slices, then cut into strips
- 2 large eggs
- 1/4 t kosher salt
- 1 t toasted sesame oil
- 4 t canola oil
- 2 c shiitake mushrooms, stemmed and sliced
- 2 c packed, shredded green cabbage
- 1/2 c shredded carrots
- 1 c thinly sliced scallions
- 2 t minced ginger
- 2 t minced garlic
- 8 6-in flour tortillas
- Hoisin sauce

- 1 package (2-layer size) chocolate cake mix
- 1 3.9 ounce package JELL-O Chocolate Instant Pudding
- 4 eggs
- 1 8 ounce container BREAKSTONE'S or KNUDSEN Sour Cream
- 1/2 cup oil
- 1/2 cup water
- 4 squares BAKER'S Semi-Sweet Chocolate, chopped, divided
- 18 small candy canes, coarsely crushed (about 1 cup), divided
- 1 8 ounce tub COOL WHIP Whipped Topping, thawed
