Mango Rita

In an 8-ounce glass, stir together mango juice, orange juice, tequila, and Grand Marnier
- 3/4 cup mango juice
- 2 tablespoons fresh orange juice
- 1 ounce tequila (preferably white)
- 1/2 ounce Grand Marnier
- Ice
- 2 thin strips orange zest
- 3 small mango balls (scooped with a melon baller)
Simplified Salade Nicoise

Hard boil eggs and let eggs sit in cold water while you prepare the rest of the salad
- 4 eggs
- 1/2 lb green beans, rinsed and ends trimmed
- 4 redskin potatoes, cut into 1-in pieces
- 1 T red wine vinegar
- 1 t Dijon mustard
- 1 t 100% anchovy paste
- 1 small clove garlic, minced
- 1 T EVOO
- 1 lb romaine lettuce, rinsed, patted dry, ends trimmed, ribs removed
- 10 oz tuna, canned or pouched in water
Breakfast Quinoa

In a medium-sized sauce pan over medium-high heat combine the dairy-free milk, quinoa and salt
- 2 cups vanilla soy, rice, or almond milk, plus more for serving
- 1 cup uncooked quinoa
- 1/4 t. salt
- 2 T. sugar or liquid sweetener
- 1 medium-sized banana, chopped into pieces
- 1/4 cup shredded coconut
- 1/2 cup nuts, seeds and dried fruits of your choice
Hearty Sweet Potato Soup

In a large pot, boil 6 c water
- 2 sweet potatoes, peeled and cubed
- 1 small Napa cabbage, roughly chopped
- 1/3 c white miso paste
- 1 15-oz can white beans, rinsed
- Sliced scallions
- Sesame oil

Steamed Whole Cauliflower with Paprika Brown Butter

- 1/2 cup panko
- 1 teaspoon coarse salt
- 1/3 cup grated Parmesan
- 1 head cauliflower, preferably green (about 2 pounds), leaves removed
- 6 tablespoons unsalted butter
- 1/2 teaspoon sweet paprika, preferably Hungarian
Sea Bass with Olive, Caper & Tomato Sauce

1. Heat olive oil in a large skillet over medium heat
- 6 Sea-Bass fillets, each about 8 oz and 1 in thick
- 3 T olive oil
- 6 cloves garlic
- 2 small yellow onions, diced fine
- 1 c green olives, pitted and halved
- 1/4 c tiny capers
- 3 c canned Italian tomatoes, seeded and crushed
- 1/4 t crushed red pepper
- Italian seasoning, salt and pepper to taste
