Cauliflower Potato Mash

Cook potatoes in boiling salted water, strain, set aside
- 3 russet potatoes, peeled, cut in half lengthwise
- 1 head cauliflower, small florets
- 1/2 stick butter, I used 1/4
- 1/2 cup milk, or if made ahead 1/2 block of cream cheese
- 1/4 tsp white pepper, salt to taste

Onion Potato Casserole

Mix above and bake uncovered 1 hour at 350
- 1 Package Frozen Shredded Potatoes
- 1 carton sour cream
- 1 Package Cracker Barrel Sharp Cheddar
- 1 bunch green onions chopped
- salt to taste
- pepper to taste
- enough milk to make consistency of mashed potatoes
Beef Balogna

Mix with hands. Shape in 3 rolls
- 2 pound hamburger
- 1 cup water
- 2 Tablespoons Morton' Tender Quick
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
Sugar-Free Candied Nuts

- 2 1/2 cups nuts of choice
- 1 egg white
- 1/2 cup Splenda granular
- 1 1/2 teaspoons cinnamon

Low-Carb Pumpkin Pie

This is the pie I made for Tack and Malorie for Christmas 2013
- Pecan Crust:
- 1 15 oz can pumpkin
- 2 eggs
- 1 cup cream
- 1 C sugar equivalent from artificial sweetener (zero-carb sweetener such as liquid sucralose preferred)
- 1 teaspoon dark molasses (optional)
- 2 teaspoon cinnamon
- 1 scant teaspoon nutmeg
- 1/4 teaspoon ground ginger
- Pinch cloves
- 1/4 t salt
- 1 cup toasted pecans, chopped
- 2 Tablespoons butter, melted
- 2 Tablespoons sugar substitute
Piggyback Shrimp ****

In saucepan saute onion in butter until transparent (5-6 minutes)
- 1 cup finely chopped onion
- 2 Tablespoons butter
- 3/4 cup chile sauce
- 1/4 cup water
- 3 Tablespoons packed lite brown sugar
- 3 Tablespoons Worcestershire Sauce
- 1 Tablespoon white vinegar
- 1 Tablespoon tomato paste
- 1/4 teaspoon dry mustard
- 1/8 teaspoon tabasco sauce
- 20 medium shrimp, peeled and deveined
- 20 2 1/2 inch strips of bacon
