Mark's Marinated Mushrooms ****

In a large saucepan, combine all ingredients
- 1 pound small fresh mushrooms
- 1 small onion, thinly sliced
- 1/3 cup white wine vinegar
- 1/3 cup canola oil
- 1 teaspoon salt
- 1 teaspoon ground mustard

- 1 cup fresh strawberries, halved
- 1/2 cup white sugar
- 3 tablespoons cornstarch

- 1 tablespoon vegetable oil, plus more for frying
- 2 large onions, chopped
- 8 cloves garlic, minced
- 1 tablespoon plus 1 1/2 tsp. coarse kosher salt
- 1 teaspoon ground cumin
- 1/2 teaspoon red chile flakes
- 12 cups reduced-sodium chicken broth
- 1 can (28 oz.) diced tomatoes
- Juice of 2 limes
- 1 package (8 oz.) small corn tortillas, cut into 1/4-in.-thick strips (see Notes)
- 2 pounds boneless, skinless chicken breast, cut into 1/4-in.-thick strips
- 1 cup chopped fresh cilantro
- Sliced avocado, sour cream, grated Monterey jack cheese, additional chopped cilantro, and/or sliced green onions for topping
Green Chile Deviled Eggs *****

Hard-boil the eggs; cool, peel, and halve them; and carefully remove the yolks
- 12 eggs
- 6 tablespoons mayonnaise
- 2 teaspoons Dijon mustard
- 4 teaspoons chopped canned Hatch green chiles
- 2 teaspoons freshly squeezed lime juice
- 2 teaspoons finely chopped fresh cilantro
- Kosher salt
- Freshly ground black pepper
- Corn salsa for garnish (optional)
Split Pea Soup

Place everything in large pot
- 2 cups dried split peas
- Ham with bone and extra ham cut in cubes
- 3 quarts cold water
- 3 large carrots chopped
- 3 stalks celery chopped
- 1 large onion chopped
- 1 potato shredded (may use more)

- 1/2 teaspoon thyme

- 1/2 cup sugar
- 1 teaspoon dry mustard
- 1 teaspoon salt
- 2/3 cup white vinegar
- 3 tablespoons apple cider vinegar
- 4 1/2 teaspoons onion juice
- 2 teaspoons Worcestershire sauce
- 1 cup vegetable oil
- 4 cups greens
- 2 green onions, chopped
- 1 cup blue cheese, crumbled
- 1 granny smith apple, chopped
- 2 large egg whites
- 1/2 teaspoon salt
- 3/4 teaspoon sugar
- 2 teaspoons Worcestershire sauce
- 2 teaspoons paprika
- 1 1/2 teaspoons cayenne pepper
- 4 1/2 cups pecans (about 1 lb)
- 6 tablespoons butter
Parmesan-Roasted Broccoli

- 4 to 5 pounds broccoli
- 4 garlic cloves, peeled and thinly sliced
- Good olive oil
- 1 1/2 teaspoons kosher salt

- 2 tablespoons freshly squeezed lemon juice
- 3 tablespoons pine nuts, toasted
