Slow-Cooker Chicken Tortilla Soup

Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker
- 1 pound shredded, cooked chicken
- 1 (15 ounce) can whole peeled tomatoes, mashed
- 1 (10 ounce) can enchilada sauce
- 1 medium onion, chopped
- 1 (4 ounce) can chopped green chile peppers
- 2 cloves garlic, minced
- 2 cups water
- 1 (14.5 ounce) can chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bay leaf
- 1 (10 ounce) package frozen corn
- 1 tablespoon chopped cilantro
- 7 corn tortillas
- vegetable oil
French Onion Soup

Directions In a medium stock pot, heat beef broth over medium-high heat
- 5 onions, thinly sliced
- 6 cups beef broth
- 2 tablespoons vegetable oil
- 3 tablespoons butter or margarine
- 1 pound shredded Swiss cheese
- 1 teaspoon white sugar
- 1/2 cup white wine
- salt and pepper to taste
- 1 (1 pound) loaf French bread, sliced
Cheesy Spaghetti Pie

Mix the cooled spaghetti, grated cheeses and eggs together in a large bowl
- 1 pound cooked spaghetti, cooled
- 1/2 cup grated Parmesan
- 1/2 cup grated pecorino
- 1/2 cup grated Swiss
- 4 eggs
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 4 slices American cheese
Lemon Lover's Pound Cake

In a large mixing bowl, cream butter and sugar until light and fluffy, about 5 minutes
- ICING:
- 1 cup butter (no substitutes), softened
- 3 cups sugar
- 6 eggs
- 5 tablespoons lemon juice
- 1 tablespoon grated lemon peel
- 1 teaspoon lemon extract
- 3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/4 cups sour cream
- 1/4 cup sour cream
- 2 tablespoons butter, softened
- 2 1/2 cups confectioners' sugar
- 3 tablespoons lemon juice
- 2 teaspoons grated lemon peel
Green Bean and Bacon Salad w/Dijon Vinaigrette

Preheat over to 425. In a large bowlk toss the green beans and onion with 1 TBL olive oil and salt and pepper
- 1 lb fresh green beans, ends trimmed and cut in half
- 1/2 medium red onion, coarsely chopped
- 1/4 + 1 TBL olive oil, divided
- salt & pepper
- 1 TBL Dijon mustard
- 1 TBL honey
- 2 tsp apple cider vinegar
- 2 tsp minced garlic
- 10 oz grape tomatoes halved
- 6-8 pieces of bacon cooked and chopped
- 1/4 cup parmesan cheese
Pineapple Mango Banana Smoothie

1. Mix fruits together in a plastic bag
- 1 cup pineapple, cubed
- 1 cup mango, cubed
- 1 banana, sliced
- 2 cups milk
Mexican Rice II

Directions Heat oil in a large saucepan over medium heat and add rice
- 3 tablespoons vegetable oil
- 1 cup uncooked long-grain rice
- 1 teaspoon garlic salt
- 1/2 teaspoon ground cumin
- 1/4 cup chopped onion
- 1/2 cup tomato sauce
- 2 cups chicken broth
Peach Cobbler (Pat Perez)

1. Melt stick of butter in baking pan, add the above mixture, spread in pan
- 1 cup flour
- 1 cup sugar
- 2 tsp baking powder
- pinch of salt
- 1 cup milk
- 1 stick butter melted

- Freeze in a bag:
- 2-lb boneless, skinless chicken breast
- 1 jar spaghetti sauce of your choice
- 1 zucchini, chopped
- 1 bell pepper, chopped
- 1 onion, chopped
