The Ultimate Beef Stew

Directions Preheat a large heavy-bottomed saucepan or Dutch oven over medium-high heat with the oil and butter
- 1/4 cup extra-virgin olive oil, for frying, plus more to drizzle
- 3 tablespoons butter
- 2 cups all-purpose flour
- 2 to 3 pounds beef chuck shoulder roast, cut into 2-inch pieces (this cut is also called chuck shoulder pot roast and chuck roast boneless)
- Sea salt and freshly ground black pepper
- 1 bottle good quality dry red wine (recommended: Burgundy)
- 8 fresh thyme sprigs
- 6 garlic cloves, smashed
- 1 orange, zest removed in 3 (1-inch) strips
- 1/4 teaspoon ground cloves
- 2 bay leaves
- 2 1/2 cups beef stock
- 9 small new potatoes, scrubbed clean and cut in 1/2
- 1/2 pound carrots, peeled and sliced
- 2 cups frozen pearl onions, a large handful
- 1 pound white mushrooms, cut in 1/2
- 1/2 pound garden peas frozen or fresh
- Fresh flat-leaf parsley, chopped, for garnish
- Horseradish Sour Cream, recipe follows, for garnish
- Toasted Peasant Bread, recipe follows, for serving
Holiday Spiced Sweet Potatoes (Yams)

1 Position rack in center of oven; preheat to 400°F
- 3 pounds (about 6 medium sized) red-skinned sweet potatoes (yams)
- 1/2 cup (packed) golden brown sugar
- 1/4 cup (1/2 stick) butter, room temperature
- 1 Tbsp lemon juice
- 2 teaspoons grated orange peel
- 3/4 teaspoon ground cinnamon
- 3/4 teaspoon ground allspice
- 3/4 teaspoon ground nutmeg
Classic german potato salad

1. Place potatoes in a large pot and cover with cold water
- 2 poundspotatoes, medium sizes
- Bacon, use one piece of bacon per potatos
- Green onion, chopped -- use one green onion per potatos
- 1/4 cup vinegar
- 1/4 cup sugar
Marsala Di Carrabba

- 4 oz sirloin steak
- 4 oz chicken breasts, pounded thin
- 1/4 cup sliced button mushrooms
- 2 teaspoons yellow onion, fine chopped
- 1/2 cup dry Marsala wine
- 12-15 pieces of prosciutto ham, thinly sliced, cut into 1/4 inch strips
- 1/2 stick unsalted butter
- flour
- salt
- black pepper
- Italian parsley, finely chopped
HOMEMADE LEMONADE

IN SAUCEPAN, COOK AND STIR WATER AND SUGAR UNTIL DISSOLVED
- 3 CUPS SUGAR
- 2 CUPS WATER
- 1 CUP LEMON PEEL STRIPS
- 3 CUPS LEMON JUICE
- 1 LITRE CLUB SODA
Honey Balsamic Vinaigrette

Place the vinegar, onion, soy sauce, honey, sugar, garlic, and red pepper flakes into a blender
- 1/2 cup balsamic vinegar
- 1 small onion, chopped
- 1 tablespoon soy sauce
- 3 tablespoons honey
- 1 tablespoon white sugar
- 2 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 2/3 cup extra-virgin olive oil
Roasted Garlic Mashed Potatoes

Slice off the very top of the garlic head
- 1 head garlic
- Olive oil
- 2 pounds red potatoes, washed well and quartered
- Salt and freshly ground black pepper
- 5 tablespoons butter
- 3/4 cup heavy cream
- Directions
- Preheat oven to 425 degrees F.
MERTIE'S SAUSAGE EGG CASSEROLE

- 1 LB BROWNED BREAKFAST SAUSAGE
- 6 SLICES BREAD WITH NO CRUST, BUTTERED
- 6 EGGS
- 6 OZ. SHREDDED CHEDDAR CHEESE
- 2 CUPS HALF N HALF
Crisp Potato Cakes

In a large bowl, combine the mashed potatoes, 1 cup panko, and beaten egg
- 4 cups left over mashed potatoes, or Chive and Onion Mashed Potatoes, recipe follows
- 2 cups panko breadcrumbs, divided
- 1 large egg, lightly beaten
- 1/4 cup vegetable oil, plus more, if needed
BLT Salad with Roasted-Tomato Vinaigrette

To prepare the roasted plum tomatoes, preheat the oven to 475°F
- Roasted-tomato vinaigrette:
- 3/4 cup extra-virgin olive oil
- 8 plum tomatoes, cored, halved, and seeded
- 6 garlic cloves, crushed
- 5 or 6 thyme sprigs
- Salt
- 1/3 cup fresh basil leaves
- 3 tablespoons tomato vinegar or sherry vinegar
- Freshly ground black pepper
- BLT salad:
- 2 heads Boston or Bibb lettuce, leaves separated, rinsed, and spun dry
- 3 large ripe beefsteak tomatoes, cut into wedges
- 8 bacon strips, cooked until crisp
