Good Eats Roast Turkey

- For the brine:
- 1 (14 to 16 pound) frozen young turkey
- 1 cup kosher salt
- 1/2 cup light brown sugar
- 1 gallon vegetable stock
- 1 tablespoon black peppercorns
- 1 1/2 teaspoons allspice berries
- 1 1/2 teaspoons chopped candied ginger
- 1 gallon heavily iced water
- For the aromatics:
- 1 red apple, sliced
- 1/2 onion, sliced
- 1 cinnamon stick
- 1 cup water
- 4 sprigs rosemary
- 6 leaves sage
- Canola oil

- 2 acorn squash, sliced in 1/2, seeds removed
- 4 tablespoons butter
- 4 tablespoons dark brown sugar
- Salt
- 2 tablespoons raw cane sugar (optional)

- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- Lemon Sauce
- 2 tablespoons butter or margarine
- 4 teaspoons all-purpose flour
- 3/4 cup milk
- 2 tablespoons lemon juice
- 1/4 teaspoon salt
- 1/6 teaspoon cayenne pepper

Chicken Stir Fry

- 5 tablespoons canola oil
- 2 boneless, skinless chicken breasts, thinly sliced
- Kosher salt and freshly ground black pepper
- One 8-ounce package sliced mushrooms
- 2 cups shredded carrots (one 10-ounce bag)
- 2 cubes frozen crushed garlic, such as Dorot, or 2 cloves garlic, chopped
- One 8-ounce can chunk pineapple, drained
- 1/2 cup Thai sweet chili sauce
- Juice of 1 lime
- 1 tablespoon sesame seeds (optional)
- 6 cups cooked brown rice
Roast Beef on Weck

- Kummelweck Rolls:
- 2 tablespoons coarse salt
- 2 tablespoons caraway seed, whole
- 1 cup water
- 1 tablespoon cornstarch
- 1/2 cup water, warmed
