Gingerbread Cookies - Aunt Marilyn

Add enough flour to make a soft dough (about 7 1/2 cups
- Boil together in lg. (1 gal.) pan:
- 1 1/2 cups molasses
- 3/4 cup sugar
- 3/4 cup shortening
- 3/4 tsp. ginger
- Add:
- Tbs. Soda dissolved in .56 cup hot water. Cool to lukewarm then add:
- 3 eggs beaten
- 3/4 tsp. allspice
- 3/4 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1/4 + 1/2 tsp. salt
Whole Wheat Blueberry Pancakes

- 1 1/4 cups whole wheat flour
- 2 teaspoons baking powder
- 1 egg
- 1 cup milk, plus more if necessary
- 1/2 teaspoon salt
- 1 tablespoon artificial sweetener

30 Minute Gluten Free Meatballs - Russ

- 1 pound lean ground beef
- 1 large egg
- 1/2 cup onion, finely chopped (optional) (or 1-2 TBL Dried)
- 1/3 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon dried parsley

- 14.5 oz petite diced tomatoes w/green chilis
- Diced carrots, celery onions (any veggies)
- Water to cover (2 cups)

- 1 cup water
- 1 cup sugar
- 4 heaping TBL corn starch
- yellow food coloring
- 1/4 cup fresh lemon juice
- pinch of salt
- 1/4 cup butter (1/2 stick)
- 6 peaches, peeled and sliced
- precooked 9-inch shell
Angel Hair Pasta with Chicken

1. Heat 1 TBL oil in a medium skillet over medium heat; add chicken
- 2 TBL olive oil, divided
- 2 skinless, boneless chicken breast halves, cut into 1-inch cubes
- 1 carrot, sliced diagonally into 1/4-inch pieces
- 1 (10-oz) package frozen broccoli florets, thawed
- 2 cloves garlic, minced
- 12 ounces angel hair pasta
- 2/3 cup chicken broth
- 1 tsp dried basil
- 1/4 cup grated parmesan cheese
