Hash Brown Nests with Portobellos and Eggs

Press 1/4 cup hash browns onto the bottom and up the sides of each of 12 greased muffin cups; set aside
- 3 cups frozen shredded hash brown potatoes, thawed
- 3 cups chopped fresh portobello mushrooms
- 1/4 cup chopped shallots
- 2 tablespoons butter
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons sour cream
- 1 tablespoon minced fresh basil
- Dash cayenne pepper
- 7 eggs, beaten
- 1/4 cup shredded Swiss cheese
- 2 bacon strips, cooked and crumbled
- Additional minced fresh basil, optional
Slow Cooker General Tso's Chicken

Use a 4-quart slow cooker
- 1 pound boneless, skinless chicken, cut in 1-inch chunks
- 4 garlic cloves, minced
- 3 tablespoons brown sugar
- 1 teaspoon dried ginger
- 2 tablespoons soy sauce (I use La Choy because it's gluten free)
- 1/2 teaspoon crushed red pepper flakes (add more to taste at the table if you'd prefer more heat)
- 1 (16-ounce) package stir-fry vegetables (to add later)
Potato Filling

- 2 pieces of toast
- milk
- 3-4 celery stalks, chopped
- 1 medium onion
- 1 tbsp of butter
- 1 egg
Ranch Pasta Salad

Cook pasta according to package directions; drain and rinse in cold water
- 3 cups uncooked tricolor spiral pasta
- 1 cup chopped fresh broccoli florets
- 3/4 cup chopped seeded peeled cucumber
- 1/2 cup seeded chopped tomato
- 1 bottle (8 ounces) ranch salad dressing
- 1/2 cup shredded Parmesan cheese
Shepherd's Pie

Brown and drain hamburger; add gravy
- 1 lb hamburger
- can of beef gravy
- 3 lbs of potatoes, mashed (12 servings of instant potatoes)
Chunky Ranch Potatoes

1. Place potatoes in slow cooker
- 3 lbs medium red potatoes, unpeeled and quartered
- 1 cup water
- 1/2 cup prepared ranch dressing
- 1/2 cup grated Parmesan cheese
- 1/4 cup minced chives
Chicken and Biscuits

1. Cut chicken breasts into bite-size pieces
- 4 boneless, skinless chicken breasts
- 1 can (10 3/4 oz) condensed cream of chicken soup
- 1 package (10 oz) frozen peas and carrots
- 1 package (7 1/2 oz) refrigerated biscuits
Easy Slow Cooker Ham

Press whole cloves into the ham so they are evenly distributed
- 1 (6 pound) bone-in country ham
- 30 whole cloves
- 3 cups apple cider, or as needed
- 1 cup brown sugar
- 1 cup maple syrup
- 2 tablespoons ground cinnamon
- 1 tablespoon ground nutmeg
- 2 teaspoons ground ginger
- 2 tablespoons ground cloves
- 1 tablespoon vanilla extract (optional)
- 1 orange's peel
Crock Pot Meatloaf and Potatoes

Mix the ingredients well and form a “loaf” in the bottom of your crock pot
- 2.5 pounds of ground turkey (or beef, if you prefer)
- 1 egg
- 3/4 cup smashed cornflakes (or bread crumbs, but I prefer corn flakes)
- 1 envelope of Lipton onion soup mix
- 2-3 Tbsp Worcestershire sauce
- salt, pepper, paprika, garlic salt, Italian seasoning to taste
Warm Bacon Cheese Spread

Cut the top fourth off the loaf of bread; carefully hollow out the bottom, leaving a 1-in
- 1 round loaf (1 pound) sourdough bread
- 1 package (8 ounces) cream cheese, softened
- 1-1/2 cups (12 ounces) sour cream
- 2 cups (8 ounces) shredded cheddar cheese
- 1-1/2 teaspoons Worcestershire sauce
- 3/4 pound sliced bacon, cooked and crumbled
- 1/2 cup chopped green onions
- Assorted crackers
