Preheat oven to 450 degrees Rub mustard evenly over pork medallions
- 2 tablespoons of Dijon Mustard
- 1 1 pound pork tenderloin trimmed and cut into 8 medallions.
- 1/2 cup panko Janapaese breadcrumbs
- 1 tablespoon chopped fresh thyme
- 1 tablespoon minced fresh parsley
- 1/8 teaspoon salt
- 1/8 teaspoon fresh ground pepper
- 2 tablespoon virgin olive oil
Big Dish O'Nachos

Preheat the oven to 350 degrees
- 3 1/2 2/3 tablespoons flour and 1/2 teaspoon each minced g 2/3 cup shredded sharp cheddar cheese
- 2/3 2/3 2/3 cup shredded pepper jack cheese
- 1 1 to 10 -8 to 10 ounce bag multicolored tortilla chips
- 1/2 1/2 1/2 cu canned black beans, drained and rinsed
- 1 1/2 1 1/2 1/2 cups cheese sauce, warmed
- 1 1/2 1 1/2 1/2 cups prepared chili warmed
- 1/2 1/2 1/2 cup guacamole
- Sour cream, pico de gallo, sliced pickled jalapenos and sliced scallions, for topping
Fast Chicken Chili

Heat dutch oven over medium high heat
- 1 tablespoon canola oil
- 1 pound skinless, boneless chicken breast, cut into bite size pieces
- 3/4 teaspoon salt divided
- 1/2 cup vertically sliced onion
- 2 teaspoons minced fresh garlic
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ground red pepper
- 3 cups no salt added canned cannellini beans rinsed and drained
- 1 cup water
- 2 4 ounce cans chopped green chilies undrained and divided
- 1 14 ounce can fat free lower sodium chicken broth
- 1/4 cup cilantro leaves
- 1 lime cut into wedges
Tangy Cucumber-dill Salad

Toss to combine
- In a large bowl whisk together 2 tablespoons red wine vinegar, 1 tablespoon each olive oil and chopped fresh dill, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. Add 1 sliced English cucumber and 1/4 sliced small red onion and toss to combine.

- 1 ( 15 oz.) can organic white beans rinsed and drained
- 2 tablespoons chopped flat leaf parsley
- 1 tablespoon wite wine vinegar
- 1/4 teaspoon salt.
