Max & Erma's Potato, Cheese and Bacon Soup

Place a heavy stockpot or Dutch oven over medium-high heat and add diced bacon
- 4 ounces bacon, cut in 1/4" pieces
- 1 small yellow onion, cut in 1/4" dice
- 1-1/2 ribs celery, cut in 1/4" dice
- 1/2 cup all-purpose flour
- 4 cups chicken broth
- 3 cups peeled, 1/2-inch potato cubes (about
- 2 medium baking potatoes)
- 1 cup half-and-half
- 1/4 teaspoon ground white pepper
- 1/4 teaspoon ground black pepper
- 1 tablespoon salt, optional
- 1/4 pound sharp cheddar cheese, grated
Saucy Ranch Pork and Potatoes Recipe

Place potatoes and water in a large microwave-safe dish
- 2 pounds red potatoes (about 6 medium), cut into 3/4-inch cubes
- 1/4 cup water
- 6 boneless pork loin chops (6 ounces each)
- 2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
- 1 cup 2% milk
- 1 envelope ranch salad dressing mix
- Minced fresh parsley, optional

Instructions Cook the beef in the oil in large stockpot, breaking it up, until it starts to brown

- 2 cups cooked, drained red kidney beans
- 2 cups cooked, drained white kidney beans
- 2 3/4 quarts beef broth
- 1 tablespoon dried oregano
- 2 1/2 teaspoons ground black pepper
- 1 1/2 teaspoons Tabasco sauce
- 2 (24-ounce) jars marinara sauce
- 8 ounces small shell macaroni (or other small dried pasta shape)
- 5 teaspoons chopped fresh parsley
Vidalia Onion Dip

1. Adjust oven rack to middle position and heat to 375
- 2 2 2 cups finely chopped Vidalia onions
- 6 6 1 1/2 sharp cheddar cheese, shredded ( 1 1/2 cups )
- 3/4 3/4 3/4 cup mayonnaise
- 2 2 1 1/2 American cheese, chopped ( 1 1/2 cups )
- 1/4 1/4 1/4 cup sliced scallion greens

Bring about 2 quarts of water to boil
- 1/2 pound fettuccine, or your favorite pasta
- olive oil
- 1 clove garlic minced
- 1/4 cup onion
- 1 pound asparagus, cleaned and cut into 1" pieces
- 1 cup grape tomatoes, halved
- mozzarella cheese
Easiest Grilled Vegetables

Cut ends off the zucchini, then cut in half lengthwise and cut into slices not quite 2 inches thick
- Other Vegetable Combinations I like for Grilling:
- 1 medium zucchini
- 1 large sweet onion (I used Vidalia onion)
- 1 large red bell pepper
- 1/2 cup Italian Salad Dressing
- Zucchini, Yellow Squash, Sweet Onions
- Sugar Snap Peas, Red Bell Pepper, Sweet Onions
- Sugar Snap Peas, Par-boiled Carrots, Sweet Onion (boil the carrots for 2-3 minutes and drain before you marinate)
- Sweet Potato, Zucchini, Sweet Onion (marinate sweet potato separately and cook it about 5 minutes before adding other vegetables to the pan)
- Asparagus, Red Bell Pepper, Sweet Onion (cut asparagus into fairly short pieces, cut on the diagonal)

- 2 cups crushed pretzels (about 8 ounces)
- 3/4 cup butter, melted
- 3 tablespoons sugar
- 2 cups whipped topping
- 1 package (8 ounces) cream cheese, softened
- 1 cup sugar
- TOPPING:
- 2 packages (3 ounces each) strawberry gelatin
- 2 cups boiling water
- 2 packages (16 ounces each) frozen sweetened sliced strawberries, thawed
- Optional: Additional whipped topping and pretzels
Comforting Chicken Noodle Soup Recipe
