Crispy Fried Sweet Onion Rings

Separate onion slices into rings, and place them in a 9 inch square baking dish
- 2 large sweet onions, cut into 1/2 inch thick slices.
- 5 cups buttermilk.
- Vegetable oil.
- 2 cups all purpose flour.
- 1 cup plain yellow cornmeal.
- 2 tsp. table salt.

Preheat oven to 375F. Spray muffin tin (traditional 12 muffin tin) with cooking oil
- 1 1/2 lbs. potatoes/sweet potatoes (or combo- like I used. =approx. 1 med to large sweet potato + 1 med to large russet potato)
- 1 tsp chopped fresh rosemary divided
- 1/4 cup grated mozzarella cheese
- 1/4 cup grated Gruyere cheese Coupons
- 1 Tbsp butter
- 1/3 cup heavy cream
- 1/4 tsp salt
- 1 clove garlic, pressed
- Pepper, to taste
- Fresh rosemary or thyme, for garnish

In a large saucepan, combine potatoes, broth, carrots and onion; bring to a boil
- 2 cups cubed peeled potatoes
- 2 cups reduced-sodium chicken broth
- 1 cup chopped carrots
- 1/2 cup chopped onion
- 1 can (14-3/4 ounces) cream-style corn
- 1 can (12 ounces) fat-free evaporated milk
- 3/4 cup shredded reduced-fat cheddar cheese
- 1/2 cup sliced fresh mushrooms
- 1/4 teaspoon pepper
