Bow Ties with Sausage and Peppers

Cook pasta according to directions, Drain and return to sauce pan
- 8 oz. dried bow tie pasta
- 12 oz. spicy Italian sausage links
- 2 medium sweet red peppers (cut in 3/4 inch lengths)
- 1/2 c. vegetable or beef broth
- 1/4 tsp. pepper
- 1/4 c. fresh parsley
Quesadilla Casserole

Brown beef and onion in skillet and drain
- 2 tsp. chili powder
- 1 tsp. ground cumin
- 1 tsp. minced garlic
- 1/2 tsp. oregano
- 1/2 tsp. crushed red pepper
- 1 lb. ground beef
- 1/2 c. onion (chopped)
- 2 8 oz. cans tomato sauce
- 1 can black beans (drained and rinsed)
- 1 can corn (undrained)
- 1 can chopped green chiles (undrained)
- 6 tortillas
- 2 c. shredded Cheddar cheese
Caramel Apples and Carrots

Place apples, carrots water and salt in saucepan
- 3 c sliced, peeled apples
- 1 1/2 c peeled baby carrots
- 1/2 c water
- 1/4 tsp. salt
- 2 tsp. butter
- 1/2 c firmly packed brown sugar
- 1/2 tsp. cinnamon
- 1/2 c dried tart cherries
Chiles Rellenos Pie

Slit chiles, spread flat. Remove seeds and rinse and drain
- 2 7 1/2 oz. can green chiles (whole)
- 1 T oil
- 1 lb. Jack cheese (sliced)
- 6 eggs (beaten)
- 1 can evaporated milk
- 1 lb. cheddar cheese (shredded)
- Hot chili sauce
Crockpot Chicken and Noodles

Cook chicken, soup, butter, and broth in crock-pot on low for 6-7 hours
- 4 boneless skinless chicken breasts (I used frozen)
- 2 cans cream of chicken soup
- 1 stick of butter
- 2 15 oz cans chicken broth
- 24 oz. frozen egg noodles
Chile and Cheese Spirals

Combine cream cheese, cheddar cheese, chilies, green onion, red pepper and olives in medium bowl
- 4 oz. cream cheese (softened)
- 1 c mild cheddar cheese (shredded)
- 1/2 c diced green chilies (4 oz. can)
- 1/2 c sliced green onions
- 1/2 c chopped red pepper
- 1/4 c chopped black olives
- 4 soft taco-sized tortillas

No-Bake Chocolate Peanut Butter Bars

Heat peanut butter, sugar and corn syrup over low heat to melt
- 3 cups corn flakes, crushed
- 1 cup crunchy peanut butter
- 1 ⁄2 cup sugar
- 1 ⁄2 cup white corn syrup
- 6 ounces chocolate chips
Peanut Butter Pie

Melt together 1/2 c. chocolate chips, 2 T butter, 1/4 c
- 1 graham cracker crust
- 1/2 c. semi sweet chocolate chips
- 2 T butter
- 1/4 c. powdered sugar
- 1-3 T water
- 1 c. butter
- 1 c. brown sugar
- 1 c. peanut butter (creamy)
- 12 oz. cool whip (thawed)
- 1/2 c. semi sweet chocolate chips
- 2-3 T milk
- 1 1/2 tsp. light corn syrup
- 2 T butter
Spectacular Citrus Salad

In a jar combine the first 7 ingredients and shake well
- 1/2 c. oil
- 1/4 c. orange juice
- 2 T honey
- 2 T lime juice
- 2 tsp. poppy seeds
- 1 tsp. grated orange peel
- 1/2 tsp. grated lime peel
- 12 c. torn red and green leaf lettuce
- 3 medium oranges (peeled and sectioned)
- 3/4 c. red onion
- 2/3 c. pecan halves (toasted)
Sun-Dried Tomato Bacon Butter

Fry bacon until crisp. Transfer to plate to drain
- 2 tsp. olive oil
- 2 slices bacon
- 1 stick butter (softened)
- 2 T minced shallot
- 1 1/2 T minced sun-dried tomatoes
- 1 T minced flat leaf parsley
- 1 minced garlic clove
- 1 tsp. lemon juice
- 1/2 tsp. minced thyme
- 1/4 tsp. hot red pepper flakes
- 1/4 tsp. dried oregano
