Oatmeal Cake with Coconut Pecan Frosting

Mix the oatmeal with the boiling water, stir and cover
- Coconut Pecan Frosting:
- 1/2 C quick cooking oatmeal
- 3/4 C boiling water
- 1/2 C sugar
- 1/2 C brown sugar
- 2/3 C flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 egg
- 1/4 C of shortening
- 3 TBS melted butter
- 1/3 C brown sugar
- 1/2 C sweetened shredded coconut
- 1/2 C chopped nuts
- 2 TBS milk
- 1/2 tsp vanilla
Orange Sherbert Salad

Dissolve jello in boiling water
- 1 1/2 pkg. of orange jello
- 1 cup boiling water
- 1 pt. orange sherbert
- 1 can mandarin oranges (drained)
- 1 large banana cut up
- 1 cup small marshmellows
- 1/2 pt. cool whip
3 Bean Casserole

Brown meat and onion and drain any grease
- 1 lb. ground beef
- 1 small chopped onion
- 1 can Lima beans
- 1 can kidney beans
- 1 can pork and beans
- 2 T vinegar
- 1/4 c. brown sugar
- 1/2 c. ketchup
- salt and pepper to taste
Taco Soup

Cook beef and onions until meat is browned and onions are tender
- 1 lb. ground beef
- 1 large onion
- 3 cans Mexican style chili beans (undrained)
- 1 can corn
- 1 can tomato sauce
- 1 can diced tomatoes (undrained)
- 1 small can green chilies (chopped)
- 1 envelope taco seasoning
- 1 envelope Ranch dressing mix
- 1 1/2 c. water
- Toppings: corn chips, taco shredded cheese, sour cream, chopped lettuce, chopped tomatoes
Garlic Chip Dip

Mix ingredients in a bowl
- 8 oz Philidelphia cream cheese (softened)
- 2 T mayonaise
- 1 small red onion
- garlic salt to taste
Caramel Chocolate Mini-Bars

Preheat oven to 350 degrees
- 1 c. quick oats
- 1 c. flour
- 1 c. packed brown sugar
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. butter (melted)
- 1 14 oz. package caramels (unwrapped)
- 2 T heavy whipping cream
- 1 c. milk chocolate morsels
Hershey Kiss Cookies

Add dry ingredients and shape into balls
- Sift together:
- 1 3/4 cup flour
- 1/2 tsp. salt
- 1 tsp baking soda
- 1/2 cup butter
- 1/2 cup peanut butter
- 1/2 cup sugar
- 1 tsp vanilla
- 1/2 cup brown sugar
- 1 egg
- 2 T. milk
Warm Potato Salad (microwave)

Cook bacon and set aside. In bacon grease stir potatoes, shallots,bouillon, and 1/2 c water
- 4 slices bacon
- 2 lbs. potatoes (peeled, halved, sliced)
- 2 shallots (finely chopped)
- 1 tsp. chicken flavored instant bouillon
- 3 T cider vinegar
- 2 T chopped parsley
- 1.2 tsp. salt
- 1/4 tsp. pepper
Alligator Sauce Piquante

Cube and soak alligator in wine for 1 hour
- 2 lbs. alligator
- 1 c. white wine
- 2 c. chopped onions
- 5 T oil
- 4 tsp. finely chopped green pepper
- 1 can Rotel tomatoes
- 2 8 oz. cans tomato sauce
- 2 tsp. Worcestershire sauce
- 1/4 tsp. oregano
- 1/2 c. celery
- 1 bay leaf
- 1/4 tsp. basil
- 1 6 oz. can mushrooms
- salt and cayenne pepper to taste
- 1/4 c. chopped parsley
- 4 tsp. shopped shallots
Baked Shells with Pesto

Heat oven to 400 degrees. Oil a 9z13 baking dish
- 1 T oil
- 1 chopped onion
- 1 lb. ground beef
- 2 c. canned tomatoes (28 oz. can)
- 1 1/2 tsp. salt
- 1/2 c. pesto
- 6 oz. mozzarella cheese (grated)
- 3/4 lb. medium pasts shells
- 1/4 c. parmesan cheese (grated)
